Give me your Coconut Bark Recipes
I have found some recipes for coconut bark that are all different. I would like to try it. Please tell me your favorite recipe. Thanks.

I use Spectrum Organic Coconut Oil (expeller pressed refined organic coconut oil-whatever that means) $6.99 for 14 oz at Meijers.
3 tablespoons Coconut oil (microwaved in bowl for about a minute to melt). 1 tablespoon Let's Do . . .Organic unsweetened Coconut (2 g carb) 1 tablespoon Red Mill Organic Golden Flaxseed Meal (2 g carb) dash of Vanilla extract (I count 1 g carb but it's way less) 1 tablespoon peanut butter (3 g carb) 1 tablespoon Neste Cocao (3 g carb) small handful of crushed roasted peanuts (3 g carb) 3 packets of splenda Mix the ingredients in the warm oil, pour onto a foil lined shallow plate, put it in the freezer for about 1/2 hour and break it up. I'm sure you could alter the recipe to cut down on the carbs, and may want to add a little more splenda, but it tastes pretty darn good to me. I eat a few small pieces after a meal as a treat. |

I like to use almond butter instead of peanut butter, and sometimes add a little protein powder for a chewy texture. I never measure anything.

I've been making larger batches of bark.
6 melted T Nutiva CO 1 heaping T cocoa powder few drops of almond extract crushed slivered almonds (approx 1-2 T) few squirts Fiberfit (I add it after I take the mixture off the fire, the direct heat makes it bubble up) |

1 Tbs Cocoa powder 2 OZ almonds (optional) 16 drops liquid stevia (I have also tried using 2 droppers of English Toffee flavor liquid stevia instead and Oh my is that GOOD) 1/4 tsp of vanilla extract I use Efagold brand organic EV. Way cheaper then Nutiva and imho it is just as good. I do not like the brand that Walmart carries at all..bleck. |

Mine is very simple.. (just made some this morning)..
6 T EVCO 4 T special dark cocoa powder 2 oz chopped almonds - toasted 7 drops sweetzfree I warm the CO in the microwave for about 30 sec, then stir in the cocoa until blended.. add drops sweetzfree and then almonds. I have an 8" tupperware, flat type bowl with a lid that I pour it all in and then put the lid on and put it in the freezer for an hour before breaking into pieces. |

I don't care for chocolate, so I make the recipe that Kevin whipped up!
1/2 cup coconut oil 4 oz cream cheese 1/4 cup granular erythritol (ground into powder for a volume of almost 1/2 cup) 1 splenda quick pack 1 teaspoon vanilla 1/4 teaspoon orange cream flavor oil Put the coconut oil and cream cheese in a glass mixing bowl and microwave the two until the coconut oil is almost completely melted. (approx 30 to 40 sec.on high) Removed the bowl and wisk the two together for about 1 min....noting that the oil and cream cheese are separated. Return the bowl to the microwave and nuke for an additional 30 to 40 sec on high then remove it and wisk in the powdered erythritol until the mixture is smooth and creamy with no separation. Then wisk in the splenda quick pack, vanilla, and flavor oil until well combined. Spoon into mini muffin(tart) pan and put in freezer to set. These are excellent!!

I beleive you can have cocoa powder on induction but watch how much you have as it does have carbs.

Dark Chocolate is Cocoa Butter with Cocoa Solids (powder) and sweeteners and NO Milk Solids and Vanilla.
Milk Chocolate is Cocoa Butter with Cocoa Solids (powder) and sweeteners and Milk Solids and Vanilla. White Chocolate is Cocoa Butter with NO Cocoa Solids (powder) and sweeteners and Milk Solids and Vanilla. I use Kevin's White Coconut Bark recipe
1 cup Coconut Oil Nutivia 1/3 cup + 1 TBSP of Gosh That's Good White Velvet (sugar free) 1/3 cup toasted pecans This is soooooo good and not bitter like some chocolate bark I tried to make. Search on Gosh That's Good White Velvet for that powder and try and hunt down Kevin's recipe for some beautiful pictures of it. |

Hey LS Oregon, my husband said that there wasn't another person, like me, who doesn't like chocolate! Glad to meet you! Now I can prove him wrong. I don't care for peanut butter, either. Try to find a candy bar that doesn't have one or the other. I look for recipes that don't take either one. I've never seen any other "bark" recipe, that isn't chocolate. Maybe we shoudl start a thread for recipes that don't contain chocolate or peanut butter???
