Help! Going to a fish fry soon..

My husband and his buddy are avid fishermen. His buddy has been dying to have a fish fry, and sooner or later we're going to have to give in. Any ideas on what I can take? Also, I'm going to experiment soon on battering my own fish, but haven't gotten around to trying it yet. If that goes well, I might do my own fish in my own little fryer. But, I still need some more suggestions. Anybody have any low carb hushpuppy recipes? Maybe using Carbquick?

I make fried catfish and hush puppies using an Atkins corn muffin mix, mixed about half and half with carbquik, plus half a packet of instant grits. Unfortunately they've discontinued the mix so you probably are out of luck on that one unless you've got some stashed in a cupboard! LOL!

I use about half the muffin mix, then to the remaining half, I add an egg, some cream,the other half of the grits, sometimes some cheese or diced onion or jalapeno, mix up and drop by spoonfuls into the hot fat that I fried the catfish in. My DH, who grew up in the South, says he likes them better than any other hush puppy he's ever had!

I generally make coleslaw to go along with it - just shredded cabbage (red and green together are pretty), chopped onion, and my dressing is made of mayo, apple cider vinegar, liquid or packet Splenda, celery seeds, a dash of yellow mustard - mix together to taste, put the shredded cabbage in a ziploc, pour in the dressing, seal and toss to coat.

I have used my homemade version of Bob's redmill lc bake mix to bread and deep fry chicken...and it worked great. In the past I have tried different things and I have been the most pleased with this.

1 cup vital wheat gluten
1 cup oat flour
1/3 cup oat bran
1/2 cup ground flax meal
1/2 wheat bran
1 cup soy flour
1/4 cup rye flour
1/2 cup whey protein
2 tsp. sea salt

my nutritional values figured as such: for a serving of 1/4 cup
calories 88

fat grams 2

total carbs 9

fiber 4

protein 10

I dip my chicken(fish for you) in an egg and water mixture first then in the bake mix. Worked great for me.

Thanks for the help! I'm not a slaw-lover, but I'm trying new things, so I might just try that. And thanks for that batter recipe also.

I'd love to see a lc hushpuppie recipe. Anyone have one? (Not useing atkins bake mix though, since that is no longer available? Coul we converta conrbreadrecipe but just make it a little thicker?

Hmmmmm, since I'm way North (Canada, eh?) I feel I can confess my ignorance of just what a hushpuppy (other than a shoe) IS...

Anyone care to post an original HC recipe here so I can peek, and maybe think about how that would convert?

Hey Jude,

Here is a hushpuppie recipes so you can see what they are. Maybe you can suggest some ways to make a LC recipe for them!!

Hush Puppies 1

INGREDIENTS:
2 cups sifted fine stone ground white corn meal
1 tablespoon sugar
2 teaspoons baking soda
2 teaspoons salt
1 tablespoon minced yellow onion
1 egg
1 cup buttermilk
4 to 5 tablespoons cold water

PREPARATION:
Stir corn meal, sugar, soda and salt together. Place onion in a small bowl. Add egg and buttermilk and beat until frothy. Pour all at once into the meal and stir lightly to mix. Add just enough of the cold water to make dough a good dropping.

The dough should hold its shape in the spoon. Drop by tablespoonfuls into hot oil (about 350 to 360°) in deep fat fryer for about 2 minutes or until evenly browned, turning to keep all sides evenly browned.

Makes about 2 dozen.

Well, just looking at it, it sure looks a LOT like cornbread, only deepfried...so I dug up a 'classic' cornbread from food network and compared, just briefly.

Cornbread ----------------------- HushPuppies
====================================
-half flour ----------------------- all cornmeal
-2X B.powder & B.soda ----------- 2X salt
-0.25X Buttermilk -----------------onion
-2X eggs -------------------------water to dropping consistency

Hmmmmmm.

Well, if it was me I'd take the nearest successful LC cornbread recipe (and there are a few here, not all of which use ABM or CQ) and take down the leavening and the eggs, leave the buttermilk (or use thinned yogurt), add onion and some more seasoning of choice, add more buttermilk just to get the dropping consistency -- and let it soak for a bit to soften the cornmeal-- then try frying up a few in some nice bacon fat... Yum-O. Or, of course, the deep fryer if it's already out and ready for, say, fish frying

Think that might work?

I have had fish breadding made with spicy pork rinds. Crush the pork rinds until very fine, dip the fish in (egg wash - optional) the pork rinds. I couldn't tell this was not cornbread batter.

I dont like porkrinds -- but I love fried fish -- so you just put the pork rinds in the processor and then dipped your fish in the porkrinds and then in parmasean?

Here are two recipes that I found for hushpuppies --


3 Tablespoons Keto Ketato Mix (2 gms carbs)
1/2 ounce Hot water
1 1/2 Tablespoons Heavy Cream
2 shakes garlic powder
1 shake onion powder
1 teaspoon parmesan cheese
salt and pepper
Oil for frying

Combine all ingredients well. Mixture will be heavy like cookie dough. Heat
oil for frying. Form into small (1/2" - 3/4") balls and drop into hot oil -
a few at a time. Only takes about 20 seconds to cook. Remove with slotted
spoon and drain. Enjoy!


1 cup atkins bake mix
1/2 cup heavy cream
1/2 cup water -- more or less
2 teaspoons creole seasoning
1/4 cup finely chopped onion
1/4 cup finely chopped celery
1 small jalapeno pepper -- minced(if desired)
3 tablespoons parsley -- minced
1/2 teaspoon garlic powder

Heat oil for deep frying to 350f. Combine bake mix, cream and water to form a very thick (spoonable)
batter/dough. (Start by adding 1/2 the water -then increase as needed) Stir
in remaining ingredients. Drop by tablespoons full into hot oil and fry for 5-6 minutes or until
golden brown. Drain very well. For variety, you can add shredded cheese, finely chopped shrimp or crab
meat, etc to the batter. You may need to add a touch more water to get the
right consistency.



461 Calories (kcal); 45g Total Fat; (76% calories from fat); 5g Protein; 27g Carbohydrate; 163mg Cholesterol; 512mg Sodium

Islandgirl, at lots of catfish restaurants here in the South, they bring baskets of hushpuppies to your table right after you sit down. (And sometimes white beans and onions). I have a problem with hushpuppies. Problem being....I adore them! I can sit and eat basket after basket after basket, and not care if I ever get any fish. Or anything else for that matter! Have you had Red Lobster's cheese biscuits, and ya know how they are so good that you just can't stop eating them? That's the way hushpuppies are. Except they are made with cornmeal, seasonings, buttermilk, egg and onion, and sometimes a little sugar, rolled into little balls, then deep-fried into pure Heaven.

Thanks for all the recipes, everybody. The fish fry has been put off until further notice, so that gives me time to try some of these out. My sister makes the best hushpuppies ever. I'm going to have to get her recipe and try to convert it. I'll let you guys know how it turns out.
