Pumpkin Muffins
Hey, I have looked in the recipe forum and I could not find anything. I want to make pumpkin muffins and I only have flax meal. I wonder if I can sub flax for the almond meal/flour? Thanks in advance.

I'm certainly no pro at LC baking, but I see no reason why it wouldn't work to sub flax meal for the almond meal.
I've seen a few posts in which people indicated that they didn't care for the texture of muffins made with all flax, and they were advised to sub almond meal for some of the flax meal. Personally, though, I love muffins made with all flax meal. |

I was wondering the same thing, seems most muffin recipes have both flax & almond flour in them. I refuse to buy almond flour due to the high cost, I just substute (SP?) almond flour for steele cut oats, but since oats are pretty high in carbs I don't do this do often. Do you have a recipe for the Pumpkin Muffins? or just one you have found on the boards? Thanks
