I made this today and it was good. Mine were nothing like a brownie, more like cake and they still had a little off taste but they weren't too bad. So far the only recipe using carbquick that I might actually make again. Thanks Kevin for all the great recipes

i was wondering, since the texture of this cake is exactly what i am looking for, could we omit the chocolate and turn this somehow into a buttery vanilla cake? any suggestions. the texture is right on the money, very similar to a betty crocker pilsbury cake. that's a compliment! have you ever tried a differant flavor with this zucchinni recipe? i don't like adding a lot of the almond flour, i'd like to keep this recipe as close to original as possible. anybody?

I was experimenting with a non dairy, no refrigeration needed icing and needed something to test it out on so seeing as I had a few of these in the freezer I thought I'd make them the guinea pig.
![]() If anyone decides to try this please let me know what you think. BTW, in case you wondered, I think it has a great taste and texture. Whipped Icing 1/2 cup davinci (your choice of flavor- I used toasted marshmallow below) 1/4 cup Carbquik In a mixing bowl gradually incorporate the davinci with the carbquik first forming a paste then a liquid until it is smooth. Put in a medium non-stick sauce pan stiring constantly over medium heat until it starts to thicken. Cool in refridgerator. In electric mixer with wire whisk combine: 1/2 cup powdered erythritol 1/4 tsp. splenda quick pack or 6 drops Sweetzfree 1 T. ThickenThin not/Sugar 1/4 cup butter 1/4 cup crisco green 1 t. vanilla Beat until fluffy. Add cooled carbquik mixture. Beat until creamy Makes between 1 1/2 to 2 cups creamy icing. approx. 4 carbs total carbs Can be refridgerated but does not need it. ![]() ![]() |

I made these...then made a second time with Expresso Pwd. I tweaked each time, but these are keepers! Next batch will be with coconut.

OMGoodness! These are the best. Flavor, texture everything! My DH is LCing now and he does not like chocolate, but I am afraid to give him a taste of these "cause I think he will love them and then i will have to share.

Kevin - I made the brownies and the whipped icing today. The brownies are really good, but I cooked them a little too long - going by your 40 mins. - I had set my timer then got busy with something else but I smelled them and checked - I cooked them for about 33-34 mins. and they're a bit dry. I think next time, I'll check at 25-30 mins.. As for the whipped icing - it's incredible!

Bfranke's tweaks
Bette posted one of her tweaks (using less Carbquik) on this thread. I am also sensitive to the taste of Carbquik, so I wanted to add the link, just so both threads are in the same place when I actually go to make these. I will make them soon, it just won't be today!

Probably stupid question
Hello - I'm new to posting (long time lurker). My son has lost 60 pounds thanks to everyone on this board enabling me to come up with something other than hamburger patties and eggs.
I keep coming back to this thread and I think I've read it 100 times, but I keep wondering - would you peel the zucchini first before you grated it? Sorry for the bother but just wanted to make sure I had all my info before I gave them a whirl. I think I dreamed about these the other night ![]() |

Clyde, as tweaker said don't peel the zucchini and when I grate mine I do not use the largest holes on the grater.
