Prize winning flax muffins!

Our local health food store was holding a recipe contest. I entered the flax seed muffin recipe!

Thank you Susi for your entry. We are pleased to inform you that your recipe was the most impressive, creative and appealing amongst all the others. Our Taste Test will take place on Saturday from 11-2 p.m. and we will award you with a prize around 1 p.m.at that time and take some pictures for our campaign and press coverage. Thank you and congratulations.

Of course I will metion whose recipe it really is....Please let me know whose it is. I know it was from Timothy, but he got it from someone else.

2 cups milled (ground) flax (golden is best)
1 cup nuts (I use pecans)
1/2 cup granulated splenda
1 tsp baking powder
1 tsp baking soda

1 tbl banana extract
1/2 cup davinci banana syrup
1/3 cooking oil
4 eggs beaten

bake 350 for 15 minutes
Makes 12 muffins. Tastes very similar to real banana nut muffins


I don't use the oil and have used liquid sf syrups( one cup and no splenda) for change in flavors. Different extracts also. Have added cocoa and coconut for german chocolate muffins. Just made a batch with coffe and cocoa for hubby and he loves them.
Refrigerate after making as they can mold quickly! Freezes well too (if they last that long)!

This sounds like a Spongebob FlaxBread recipe made into muffies..

Hey, congratulations!!!! And those peeps probably don't know about the Davinci's syrups..

My local health food store doesn't stock anything with Splenda because it's not "natural."

Its time to change health food stores buttttttttttt you can buy many things with Splenda right here on this site and it helps support this wonderful site we all enjoy.

I buy a lot from Netrition. I don't agree with my health food store's policy. It's hard to believe that they feel that organic toaster pastries are healthy. Whatever.

Not: Yes, my health food store carries healthy chips, etc...so to speak..but they do carry a few SF Syrups when I need one in a hurry..
