LC Truffles
I know I posted these in another thread but I thought they deserved their own.
LC Truffles (yeild about 15 truffles @ about 2 carbs per truffle) 4 oz unsweetened hersheys chocolate 6 T. full fat coconut milk 2 T. sf blackberry syrup 1 splenda quick pack 1/2 cup powdered erythritol Chop the chocolate and put into a glass mixing bowl. Then bring the coconut milk and syrup to a boil and pour over the chocolate and let sit for 5 minutes. Then mix in the sweeteners and refrigerate for 15 minutes to set. Then roll the granache in 1 inch balls and rolled each ball in misc. coatings such as nuts and coconut. The testers are asking for more. If you want a satisfying chocolate fix, these will give it to you. ![]() ![]() |

Looks delicious. We don't have SF Hershey's here, just Nestle's but I guess that would do. I don't have any SF blackberry syrup either--do you taste the blackberry?

Kevin - I have some coconut milk, it's 9 g. of fat, 8 g. saturated per 1/3 cup - is that full fat or are you talking about something else? This has 2 g. carbs per 1/3 cup. |

The one I use has 10g fat so that is close. Usually it will say first pressing but by full fat I mean when you open the can it is not thin but almost sour cream consistancy for half the can. i.e. it plops out of the can rather than pours.

As I recall, this is very thick on the top half of the can. Says to shake well before using to mix it in. So you just used the top creamy half of the can? Did you just throw the rest away? Do you get yours at a grocery store? Brand name? Sorry for all the ?'s but I think I want to try these truffles and I want to get them right!

Oh, ok. The brand I have is JFC, it says it's a product of Thailand. I may look at some other brands and see how they compare to the fat content. I'm really thinking I gotta try these truffles! They look great, Kevin!

Heavy cream would also work just as well tweaker. I use milk alternatives so my DW can enjoy the things I make. If it were not for that I bet I would have made them with the cream.

Kevin, how sensitive is your wife to milk products? Can she use any? We are thinking my DH might be having problems with milk products, and has cut them pretty much out right now, and is feeling a little better...at least the nausea and vomitting seem better. Guess I am just interested in what other people find they can tolerate.

certain cheeses are ok mostly yellow ones like chedder and american and she can drink lactaid milk but other than that most everything else effects her one way or another some mild some severe.

I made these yesterday and they were so satisfying. Thanks for the recipe. I had some low carb chocolate chips that I needed to use up, so I used those and it worked great. |
