Fish Recipes

I love fish, but never cook it at home. Any suggestions? I need recipes that are not loaded with fat as I watch my fat and carbs. Thanks!

I usually just cook white fish with some cayenne pepper, a bit of lemon juice and some fresh ground pepper.
Bake it in the oven for 20-25 minutes..

Parmesan Tilapia Fillets


Serving Size: 6

-= Ingredients =-

6 tilapia fillets
2 eggs beaten
1 Tablespoon water
1/4 cup unsalted butter melted
1/2 teaspoon paprika
1/2 prepared LC bread crumbs or pork rinds (reg or spicy)
1/2 grated parmesan cheese

-= Instructions =-

Preheat oven to 375.

1. Rinse and dry tilapia fillets
2. Mix the two eggs with 1 Tlbs water in a bowl.
3. Combine butter with LC bread crumbs, or ( finely ground pork rinds) parmesan cheese and paprika and set aside.
4. Dip tilapia fillets in egg mixture then lightly coat with bread crumb mixture. 5. place in greased glass pan cook at 375 12-15 minutes or until cooked through do not over cook.

Recipe can serve six people




Smothered Tilapia


Serving Size: 4


-= Ingredients =-

1 pound tilapia fillets
2 large tomatoes ; sliced
4 slices Swiss cheese
2 large lemons
steak ; seasoning
dried ; oregano

-= Instructions =-

1. Preheat the oven to 350 degrees.

2. Place the fish fillets into a 9x13 inch glass baking dish. Slice the lemons in half, and squeeze the juice out over the fillets, turning them to coat thoroughly. Sprinkle steak seasoning to taste over both sides of the fillets.

3. Lay slices of Swiss cheese over the fillets so they are covered. Place tomato slices over the cheese. Sprinkle dried oregano over the top.

4. Bake for 20 minutes in the preheated oven, or until fish flakes easily with a fork.

I sprinkle cajun seasoning on mine then dip it in egg beaters and fry in peanut oil. The egg makes a wonderful crust that my husband thinks is a flour crust. You will be amazed at how wonderful this turns out. I have only used tilapia and cod with this recipe but it is wonderful.

I have also used a cedar plank to grill my fish. you get a 12" cedar plank, you can get these at Home Depot, ask them to cut the piece of cedar into
12" pieces. they will do this for free. Soak your cedar plank all day in water fully submerdged. I place a brick on mine in a tub of water. Put the fish on the grill on the cedar plank and cook for about 10 minutes, when fish is firm to the touch. I have used Salmon and Tilapia with this. Sprinkle any kind of seasoning you like but again I use cajun and a few slices of lemon.
