I'm so glad I found this thread! I bought some CO last night and am anxious to try this recipe tonight when I get home. I think nuts are holding me back, so I'm going to leave them out first.
Funny, when I was doing LC years ago, I never heard about CO, or if I did then it didn't sink in. I'm not much for buying special products, but this seemed worth it. I'll post after I try it! |

Made this today and Ive eaten almost the whole triple batch i made...good lord. I figure there are worse things I could binge on eh? I toasted my almonds in a pan before stirring them in, yummy! Makes an excellent Christmas party candy (if you keep them in a cooler part of your room). Next batch is going to be crushed SF peppermint candies stirred in.

Ok ladies and gents! I made that recipe with SF peppermint candy crushed up. Oh wow. Hubby loves it, says it tastes better than what we buy in the store. Making a batch with dried cranberries for my daughters who are married, theyre not low carbing but less sugar is better for everyone! Enjoy the day folks, more snow in Omaha.

My mom seems to think that eating the coconut oil as "chocolate" would be abusing it or "overdoing" it even though it is healthy. I told her that 4 T of coconut oil is the recommended dosage, but she said that someone(DH) might eat too much of it. Anyone, what is your experience with this stuff? Do you always make the 4T amount each day, or if you make more to you eat too much sometimes?
