whole flax seeds and granola
I have read that whole flax seeds are just about impossible for the body to digest- they need to be ground for digestion. I want to make some homemade granola with nuts and a LOT of whole flax and golden flax seeds. Well, if it is true that the whole seeds can not be digested- can I safely assume that "most" of the flax I use will not be digested??

Whole flax seeds pass through the body undigested. They are impossible to crack with your teeth, too, so I wouldn't bother using whole flax seeds in anything, because you won't get any taste or fiber from them.
Why would you want to use them whole? |

Flax seeds have a nice crunch when they are toasted. I know that when I bake them a bit with the granola- the seeds will get toasted and that may make it more possible for the seeds to be broken and digested. I was just thinking that I should not have to worry to much about counting all the carbs in the flax seeds- i think i may count half the carbs for the two cups that I am going to add in the granola.

I don't really measure anything- but here is what i did- give or take a few nuts.
1/2 C. sugar free honey-- i found it at the super Wal-mart- only about 2 bucks. 1/2 butter-- i used half butter and half coconut oil this time heat butter in microwave and melt- add honey and mix well. then in a large bowl-- 1/2 C. TVP (Texturized Vegeatable Protein) found easily in most grocery tores- and it is cheap. 1/2 C. Almonds- i like sliced 1/2 C. Pecans- crushed 1/2 unprocessed wheat bran or protein powders or almond meal-- whatever "powder" you want. 2 Cups whole flax seeds 1- 2 TSP cinnamon You can pretty much put whatever you want in this. I also sometimes add a couple of drops of sweetfreez or vanilla davincis to this. Then I mix everything together and bake at 300 for about 30 minutes- make sure you stir ir a couple of times during baking. Sometimes I mix some egg whites and add it to the mixture- this helps it clump up more. I find this to be a nice sweet crunchy snack- the only bad this is the portion control.
