Coconut Cream Pie w/coconut, pecan, cacao nibs crust
8 servings @ 4 carbs per slice.
Crust 1/4 cup unsweetened coconut 10 T. Carbquik 1/4 cup pecans 1/4 cup cacao nibs 1/4 cup powdered erythritol 1/2 t. splenda quick pack 3 T. coconut oil Pulse all dry ingredients in food proccessor until ground fine. Cut coconut oil into dry mixture and press into a 9 inch pie dish. Bake crust in a preheated 350 degree oven for 20 minutes or until set. Let cool completely. ![]() Filling 1/2 cup powdered erythritol 1/4 cup not/Sugar 1 T. diabetisweet 1 T. vanilla extract 1 cup unsweetened coconut 2 egg yokes 1 tablespoon butter 2 cups coconut milk 3 T. coconut cream concentrate Combine dry ingredients with coconut milk and heat over medium high heat until well incorporated and smooth. Add in vanilla, butter, yokes, and coconut cream concentrate stirring constantly. Bring mixture to a simmer and reduce heat to medium low. Continue stirring until mixture becomes very thick. Remove from heat, cover and let sit for 5 minutes. Fill cooled crust with filling. ![]() Meringue 4 egg whites 1 tsp. cream of tartar 1/4 cup granular erythritol 2 T. not/Sugar 1 T. diabetisweet Combine egg whites and cream of tartar. Beat until soft peaks form. Gradually beat in sweetener until stiff peaks. Put lightly on pie. ![]() Bake pie in a preheated 350 oven for 20 min or until meringue is a golden brown. ![]() |

Hi Kevin,
I just found this recipe after going through your list - and REALLY want to make it - but would have to order both the nibs and the coconut cream concentrate online from two different sources - thus incurring two separate shipping charges - plus the concentrate is expensive. SOOOOOO - a couple of questions: How important are the nibs to the crust? The other - I live in a area with a large population of people from the Caribbean (South Florida) and all of our grocery stores have an entire section devoted to food products indigenous to the area - however NO coconut cream concentrate. BUT what I did find was Pure Coconut Cream which comes in a 6 oz size. - it's like a paste. Could I substitue that for the coconut cream concentrate - it seems pretty concentrated to me. If not I just expect that I'll have to shelve the recipe - way too expensive! Thanks! Barb |

Barb, I used the nibs to add a little crunch and flavor to the crust but they could be omitted without a problem. Depending on your taste, a sub that could be used to acheive the same effect would be chopped coffee beans.
Also the Pure Coconut Cream that you mention will do just fine as a sub. Let us know how it turns out for you. |

Well I just finished making the filling for the pie using the Pure Coconut Cream and it tastes GREAT - also has the consistency that is required. The BEST part is the Pure Coconut Cream only cost me 89 cents!!! My husband will be VERY pleased with this one - coconut cream is one of his VERY favorites - thank! AGAIN |

BUMPING..going to fix this for my LC dessert for Easter to go along with my Ham with LC glaze...Kevin's Pot Roast...mock potato salad..deviled eggs..Kevin's Rolls made with his LC Whole Wheat Bread and Kevin's Green Bean and Cauliflower Casserole.

I will definitely be trying a gluten-free version of this when the coconut concentrate and isomalt comes in the mail! Love that you're using stuff like cacao nibs. Looks delish!

I adore coconut cream pie with whipped cream topping, but not meringue. If I'm not doing meringue, do I need to cook the pie (after the previous steps)? This sounds so yummy!

I made this and just ate a piece of it..what I did was instead of meringue I used Heavy Whipping cream thicken with Geltine and sweetened with a couple of drops of liquid splenda. I also didn't use the nips. I just used more pecans in my crust. So..no..you dont need to cook it if you dont use the meringue because all he is doing is browning it. It thickens up great without putting it back in the oven. Very good Kevin! Thanks!

Kevin, I think I can sub for the coconut cream concentrate, which I don't want to order, but have a question about the merinque; would poly-d and a little add'l Splenda work as a sub for diabetesweet, or would that fail to work in a meringue?
And, just out of curiosity, do you know if Navitas Naturals Raw Cacao Nibs (organic) is a good brand? (That's the one I've got.) Thanks. |
