Favorite way to use coconut oil?

I am wondering what everyone's favorite way to use coconut oil is. I just started using it and I love melting coconut oil and cocoa w/ stevia and peanut butter. Freeze it and they are like peanut butter cups. Any other ideas? Maybe some shake recipes?

I made a batch of the coconut bark yesterday, and I find it pretty good. Next time will put the nuts in it, but chocolate and coconut and fills that snack gap pretty well. Daughters BF said reminded him of almond joys....

I use it in place of the oil in dobie muffins. I also add some to hot flax cereal, Cj's breakfast and the cream cheese muffins. Cant tell that it is there.

Please post the pb cup recipe!

I got the recipe from the recipe room and it is called Chocolate Peanutty Candy. The only thing I change is I use a little bit of Stevia instead of the Splenda. I couldn't figure out how to link it in this message. Sorry.

I just made my own make-shift recipe after reading what you wrote and it came out awful! Super bitter and yucky... I think I used too much cocoa powder. I still don't like when solid coconut melts on my tongue, it feels gross to me? Maybe it wasn't frozen enough solid? How is the bark when you eat it?

What is the bark? Sorry, it was awful. I absolutely love it! I use the exact measurements in the recipe except for the Splenda. My 7 year old niece begs me to make them when she comes over and my 5 year old son loves them as well. My husband thinks they are just "okay".

I just made it substituting a third of a cup of sf choc syrup for the 30 splenda packets (30 carbs right there). The splenda website says that 24 packets equals a cup of sugar - so 30 packets would be 1.33 cups of granular splenda. The batter tasted a bit fake. They are better once froxen, but some may want them sweeter. The recipe made me 15 mini cups.

Per ******, the way I did it, each cup has 100 calories, 10g fat, 2g carbs, .73 of fibre, and 1.6 g protein. If I has used powdered splenda, there would be 3 carbs in each - assiming your receipe comes out to 15 cups.

I also just made these but managed to get 24 minis, with about 3 or 4 of them being fuller. I wish I hadn't seen this post because I have a hard time resisting this kind of thing, and I've already overeaten them. I used a mini plastic muffin "pan" and they popped right out, no trouble. I do like them, but be careful not to overeat them and frankly I doubt I'll make them again because of my own self control issues.

The bark I made from another recipe, with cocoa, Davinci syrup, splenda and coconut oil. I like it in small pieces. Husband swears can taste coconut so refuses to eat it.

Daughter will eat it.

I use mine as a cooking oil, but my favorite is Tropical Traditions Coconut Cream. It's pure coconut ground into a paste, and is made up of 70% coconut oil. This stuff is the BOMB in my smoothies. I use a TBS every time.

I re-made the bark recipe, and added the nuts. It is addictive way to get coconut. Forget putting it in a drink!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

Do you have any other suggestions to use the coconut cream?


For coconout oil, I use it when I fry just about anything. You use much less of it than regular oil and I like the way things turn out better.

Today I made:

4 T coconut oil (melted in microwave)
2 T cocoa
1/8 C Davinci's (White Chocolate is what I used)
1/8 t Stevia liquid

I divided this in half & in one half I mixed in (1) T peanut butter and in the other half I added (1) t instant coffee; then I froze it all.

Both tasted really good; but I think next time, I'll add a bit more coffee as I was hardly able to taste it... there was barely a hint of coffee flavor.

Some kinds of coconut oil taste and smell like coconuts, other kinds don't. If the oil is called "virgin" or "extra virgin" it will have a coconut flavor and aroma to varying degrees, depending on brand. If you like coconut, this can be nice in sweet applications. If you want to stirfry or use the oil as you would vegetable or olive oil, you're better off with "expeller-pressed", in my opinion. It has no aroma or flavor. Wal-Mart sells a refined, bleached, deodorized coconut oil very inexpensively. It is not expeller-pressed but it works well for frying. If you go to a coconut message board, you will find page after page of opinions on brand and types of coconut oil. Some folks feel very strongly about the benefits of their chosen type. Prices of coconut oil vary greatly, too. Extra virgin is far from cheap.

Personally, I have opted to use expeller-pressed for most cooking needs as I don't want, say, my scrambled eggs to taste like coconut. I sometimes use virgin for my coffee or a sweet item where the coconut flavor is compatible. I use the Wal-Mart LouAna brand if I'm doing some frying that requires a larger quantity. I've tried to strike a balance among factors of health, cost, and flavor. This is a "To each his own" situation, I think.

Thanks Ginny. I had looked at the LouAnna brand but noticed it wasn't expeller pressed so I didn't know how it would be. Netrition doesn't carry any expeller pressed either. I don't want coconut flavor.

I've used a lot of Jarrow Organic Expeller-Pressed Coconut Oil. I can get it quite reasonably in a local health food store, but I've also seen it on ******** for a terrific price (and they have a low shipping cost,too). This Jarrow type does not have a coconut aroma or flavor. Jarrow does make a virgin oil that has a light coconut taste. On the coconut board, there are people who swear they do not get the metabolic effects of coconut oil unless it's the extra virgin kind.
