What are your fave veggie recipes?
I'm always looking for new and yummy ways to enjoy my veggies, please share your favorites.
Some of my faves: mock mashed potatoes (linda sue's recipe) creamed spinach (linda sue's recipe) roasted green beans (drizzle with olive oil and roast for 30-45mins) roasted zucchini fries (dip in egg, coat with parmesan cheese, drizzle with olive oil and then roast in oven) mushrooms sauteed in butter and a splash of soy sauce RAW sugar snap peas, cherry tomatoes, broccoli, cauliflower dipped in ranch dressing |

Eggplant "Manicotti", creamed spinach, split and roasted brussels sprouts, boiled cabbage, parsnip fries, roasted fennel, eggplant, pretty much any veggie roasted.
Spaghetti squash with alfredo sauce and parmesan cheese, eggplant lasagna, and sauteed peppers, onions, and mushrooms. Yum. ![]() |

This is more of a summer recipe since it is served cold, although I just made it again this week. Everyone loves it.
Marinated Mixed Vegetables 8-10 servings VEGETABLES 2 stalks broccoli, cut into florets 4 large mushrooms, sliced 4 stalks celery, sliced 1/4 inch thick on the bias 1 small head cauliflower, cut into florets 1-2 zucchini, sliced and cut into half-moons Grape tomatoes MARINADE 1/2 cup splenda 1 teaspoon dry mustard 1/2 teaspoon salt 1/4 teaspoon ground black pepper 1/2 cup vinegar (I use red wine) 3/4 cup olive oil 1/2 small onion, grated 1 tablespoon poppy seeds Place vegetables in a large bowl. Combine splenda, dry mustard, salt and pepper in a small bowl. Whisk in vinegar and oil until sweetener is dissolved. Stir in onion and poppy seeds. Pour over vegetables, mixing until well coated. Refrigerate overnight, or at least 3 hours. Stir occasionally and prior to serving. |

-Linda Sue's fake fried apples -broiled zucchini sprinkled with old bay and lemon -turnips, boil the dickens out of them and then smother with butter (hubby doesn't like them so I don't make them very often) -broccoli with alfredo sauce or just steamed and buttered -smooshy green beans with onions and tomatoes -slaw with little baby shrimp in it -collards or kale cooked with olive oil and garlic...hubby doesn't like this one either. -Linda Sue's mock stuffed potatoes but I make them with half cauli, half broccoli |

Sweet potato fries - cut into McDonald's sized strips, toss with a little olive oil, spread in single layer on baking sheet, sprinkle with kosher salt, bake at 400* about 30 minutes or til some are getting browned and crispy.
Halved Brussels sprouts done that same way, use garlic salt though! Ovenroasted eggplant - cut into rounds, dip into beaten eggwhite, press firmly in Parmesan cheese (the green can kind), bake at 400* til browning, flip and bake til both sides are browned a bit. Root veggie bake - cubed rutabagas, turnips, and sweet potatoes, tossed with olive oil, fresh chopped rosemary, onion, and garlic, roast at 375* turning occasionally til browning. (Good for later rungs of the carb ladder.) Spinach salad with hot bacon dressing - cut up a few strips of bacon, put in microwave-safe bowl, nuke til crispy, pull out bacon and drain on paper towels - add a tablespoon of minced shallot, nuke a few seconds til translucent - add a tablespoon of cider vinegar and a drizzle of toasted sesame oil and a packet of Splenda (or to taste) and a few red pepper flakes if desired, pour over baby spinach in a heatproof bowl, add the bacon bits, toss and serve. DH LOVES that one!

I found this one on the boards here & it's so good:
Tangy Cole Slaw: 1 small pkg cole slaw mix 1/2 sweet red pepper, chopped 2 green onions, chopped 3 Tbsp Sesame or olive oil (going to use sesame) 1/4 cup unseasoned rice vinegar or red wine vinegar (watch carb counts) I am going to probably just use apple cider vinegar for lower carb counts 6 packets Splenda (more or less to taste) Combine vinegar, Splenda and oil, whisk until blended. Combine slaw mix, peppers, onions. Mix together and serve. Even better when made ahead of time and given time to marinate. other favorites are: roasting asparagus in the oven dipping raw cauliflower & broccoli in sugar free dip pickles my Sauteed Pureed Veggie Soup (in recipe room under Angela's ...) in a green smoothie - with berries added in addition to veggies celery with nut butter (preferable raw macademia-cashew) |

fresh asparagus roasted or sauteed with EVOO and garlic
shredded cabbage fried with Smart Balance Light, garlic and black pepper cooked spaghetti squash with Smart Balance Light, grated parmesan cheese & black pepper zuchhini/yellow squash, red bell pepper and/or mushrooms, fried in Smart Balance, garlic, etc. (or roasted with EVOO) Libby's canned pure pumpkin warmed with spice blend Davinci's ![]() I also love spinach, broccoli and cauliflower--all sorts of ways. And I enjoy raw celery and cucumbers, a lot. (Now I'm ready for bed and wanting more vegetables, lol). |

If we're talking cooked veg,
- quickly sauteed spinach with butter, a pinch of nutmeg, seasalt and freshly ground white pepper. - steamed baby bok choy with ginger, toasted sesame oil, fish sauce and toasted sesame seeds. |

Roasted Cauliflower:
Break head of cauliflower into smallish pieces Toss in shallow pan with olive oil, S&P, chopped garlic if desired Roast at 400 30-45 min, turning occasionally YUM! My grandmother used to fry cauliflower in bread crumbs for holiday meals. That is what this reminds me of. |

Oven fried green beans, roasted assortment of veggies, roasted squash, deep fried brocolli, sauteed cabbage with bacon and onions.
