Looks good, and a sneaky way to get DH to eat veggies!

One thing, we don't like coconut very much ... could we substitute, do you think, for the coconut oil and the shredded coconut? (Not to mention I don't have any ... heh heh heh) I have some flax meal, could I use that instead of the shredded? Or would that just be too odd ...

Any vegetable oil would work and although flax is not a choice I would make it will most likely work.. If you want to be even sneakier you could always throw in some sf chocolate chips too.

Hey Kevin?

Do you think spaghetti squash would work here? I've never cared for zucchini, just can't seem to develop a taste for it.

TIA

Thats a great idea. I'd cook it until it was aldente then drain and use. Shredded raw would be too firm I think. Thanks for the idea.

Not all coconut oil tastes like coconut. The kind I have just says "Organic" and "Expeller Pressed" on the lable. It is 100% bland, with no flavor at all. I believe I read on another forum that it's the "Virgin" coconut oil that tastes like coconut.

I made a batch of these this morning using spaghetti squash rather than zucchini and they turned out quite nice with a great favor.

This for some reason doesn't strike me as a classic Kevin.
Maybe too healthy looking?
But yes of course I'm going to make it also. I like healthy looking.
