I just made this, and I have to say it looks and smells heavenly. I was wondering about the directions where it says to spread the cream cheese mixture evenly over the batter. I actually was not able to do that because the batter was not very think and when I tried to spread the cream cheese layer it more or less just sunk into the batter. Is this how it is suppose to work? I can't wait to try a piece later!!

This is an amazing cake! I've never been able to spread the cream cheese either, but I just usually drop blobs all over the batter and kind of spread it with the tines of a fork. I really like this with frozen wild blueberries. Yum! 350* is too hot for my oven (it turns really dark brown before it's done) so I cook it lower at 300* for about 45 mins.

I plop the cream cheese mixture too and it turns out perfectly. This is my all time favorite and I wish I could have it in the house 24/7 every single week of the year but it's SO good that I want to eat it all in the first day. So now I save it for special days.
Thank you Carolyn.. this recipe was the one that showed me - eating LC can be good and yummy and tasty! I do not have to miss out just because I'm eating healthy! |

Well, we can still get fresh raspberries and blueberries..You can have this for your birthday, then eat for breakfast (over several days) until it is gone..That's what I do.

Today is my low carb cooking day when I make food for the week. I have already made artisan flatbread, crispy crackers with coconut flour, and am roasting the tomatillos for chile verde. I just sat down for a minute to check in on the recipe board and saw this amazing cake. Guess I will be rooting around in the freezer for some frozen berries. My husband likes a little something with his coffee in the morning and we are plum out of ricotta cheesecake. Thanks so much! This board is amazing.

I can't make this right no because I am in the middle of moving, but when I am all moved and unpacked I wanted to try this again only using carbquik instead of the almond flour. Do you think that it would work?

I just put this in the oven, I forgot to put on the raspberries before the crumb topping so I had to put them on the very top,, should be ok.. cant wait to have a piece later tonight at work.. yum

Thanks for the tip Carolyn. I am trying to get use to the taste of Carbquik. So far I really like it as a coating for chicken. I have made the easy drop biscuits and they're not too bad. I am going to try it as a sub in the impossible pies too sometime. I guess if we want to try making some of the old recipes we have to sacrifice on the taste a little bit..or a lot...lol. I guess I will try subbing it in this recipe when I get a chance, and I will report back when I do.
