That is a great pic Linny. Thanks for sharing. I love this casserole. My whole family likes it much better with sausage in place of the bacon--gives it more flavor. Must make it again real soon.

I forgot to mention that I shredded the chicken with my hands rather than take the time to cube up. Loved it that way!

Bump with a recipe review-
Love! this recipe. I read the comments about it being watery so I made a few changes:
less sour cream, a bit of cream cheese, and about 1/2 cup of EBs, to try to thicken it up a bit, and I added diced sweet small peppers with the cabbage and onion. I also threw in some dried red peppers. Yummy!! Will make it again, for sure! |

Hi allie cat - I'm new and this recipe sounds wonderful - will make it this week - have you made the mock mac and cheese with ham? it was in a low carb cookbook and has the best cheese sauce I've ever had - will send it if you are interested - I'm Sue C from SC

I Googled it and found this recipe on another website.
Cauliflower "Mac" and Cheese Casserole Recipe courtesy George Stella .Prep Time:15 minInactive Prep Time:--Cook Time:20 minLevel: EasyServes: 6 servings.Ingredients •Kosher salt, as needed, plus 1/2 teaspoon •1 large head cauliflower, cut into small florets •Vegetable oil spray •1 cup heavy cream •2 ounces cream cheese, cut into small pieces •1 1/2 teaspoons Dijon mustard •1 1/2 cups shredded sharp Cheddar, plus 1/2 cup for topping the casserole •1/4 teaspoon freshly ground black pepper •1/8 teaspoon garlic powder •Equipment: 8 by 8-inch baking dish Directions Preheat oven to 375 degrees F. Bring a large pot of water to a boil. Season the water with salt. Spray the baking dish with vegetable oil spray. Cook the cauliflower in the boiling water until crisp-tender, about 5 minutes. Drain well and pat between several layers of paper towels to dry. Transfer the cauliflower to the baking dish and set aside. Bring the cream to a simmer in a small saucepan, and whisk in the cream cheese and mustard until smooth. Stir in 1 cup of the cheese, salt, pepper and garlic and whisk just until the cheese melts, about 1 to 2 minutes. Remove from heat, pour over the cauliflower, and stir to combine. Top with the remaining 1/2 cup cheese and bake until browned and bubbly hot, about 15 minutes. Serve. (They said to just add small amount of diced ham, if desired).

I made this yesterday using Italian sausage rather than bacon. Oh my, it was delicious
. It is kind of funny, I only made 1/2 the recipe because DH doesn't eat cabbage at all. I figured if I didn't like the recipe, I didn't want to have 8 servings. Well, I ate 2 1/2 last evening and am busy this morning thinking about the rest!On the recipe it says freezing is not recommended. Is that because of the sour cream? Has anyone tried freezing?
