This is how I make my version:
1/3 cup cottage cheese, spray the pan and put it in 2T davincis (vanilla is my fav) 1 packet splenda 1 scoop whey protein powder 2 eggs Mix it all together and cook like scrambled eggs until starting to set, add about 2 T of wild blueberries (frozen kind) and finish cooking. Top with whipped cream. Just had this for dinner, it is my favorite and keeps me full for hours. |

Well...I just made this 'cause I was hungry for something but I didn't know exactly what.
I used the 1st google result just like the OP. Except I omitted the lemon, I added some almond extract along with the vanilla, I used 2 packets or Equal, and a TBS of bake mix to give it some "chewable" texture. It is FANTASTIC! It tastes just like pancakes with syrup...but ya don't even need any syrup! Next time I will also try with whipped cream on top. Thanks OP! |

Yeah, I omitted the lemon too. Also, I used liquid sugar twin instead. I put Atkins low carb maple syrup on top. Just like pancakes.
