Need a sugar-free/nut-free idea!

DD has her school Christmas party on Friday. One of the kids in her class is diabetic, so we'd like to make something sugar-free (Splenda's OK). The other catch is it has to be nut-free too

Any ideas?

I have NO clue of anything to bake for a diabetic and nut free. mabye you'll get some ideas from someone. I hope.

another idea (although, not to bake) would be cheese slices. you could cut them in shapes with cookie cutters and have crackers to serve with it.

toast some oatmeal and cool it. melt a ounce of unsweetend choc with 2 tbl butter, add about 3 T splenda to taste. Mix in the oatmeal and some toasted coconut if that works. press into a plastic lined pan, chill and cut into squares.

RECIPE INGREDIENTS:
Bite-size, waffle-shaped pretzels
Hershey's Kiss or Hershey's Hug
M&M's candy

1. Heat the oven to 170º. Set a number of bite-size, waffle-shaped pretzels (one for each treat) in a single layer on a cookie sheet lined with parchment paper, then top each pretzel with an unwrapped Hershey's Kiss or Hershey's Hug.

2. Bake for 4 to 6 minutes (the white chocolate will melt more quickly), until the chocolates feel soft when touched with a wooden spoon. Remove the cookie sheet from the oven and quickly press an M&M's candy into the center of each Kiss.

3. Allow the treats to cool for a few minutes, then place them in the refrigerator to set, about 10 minutes. Place handfuls of the candies in clear plastic bags and tie on colorful ribbons.

There was a recipe posted recently about fudge. 2 blocks of unsweetened bakers chocoalte, 1 16oz box of cream cheese, vanilla and splenda. there were nuts in this one, but you could omit them. It makes a dark chocolate fudge. HEre is the recipe posted by sweeteater:

SUGAR FREE FUDGE RECIPE

16 oz. cream cheese, softened
2 unsweetened chocolate squares (1 oz. each) melted and cooled
1/2 cup sugar substitute (Splenda is good)
1 teaspoon vanilla extract
1/2 cup chopped pecans, optional

I made them with the nuts and they came out good.

LC Coconut Chews -- Makes about 32 cookies

These are very good. I took a batch to work for a gathering of non-diabetic/non-lc people and they were a big hit!
See the tips below if you don't want to use the sunflower seeds.

1/2 cup coconut milk or heavy cream
1/2 cup equivalent sugar substitute
1/2 cup sour cream
2 cups unsweetened coconut flakes

125 grams (4 oz) cream cheese -- softened
2 large eggs -- at room temperature

2/3 cup sunflower seeds*
1/2 teaspoon lemon extract**
1/2 teaspoon orange extract**

Heat milk in microwave for 45 seconds. Stir in sweetener until completely blended. Add sour cream and mix well. Stir in coconut. Let stand 1 hour.
Preheat oven to 350F. Line baking sheets with parchment paper.
Beat cream cheese with eggs until smooth. Add remaining ingredients. Stir into coconut mixture.
Place on baking sheets using about 1 tablespoon per cookie.
Bake about 15 minutes or until lightly browned. Cool 5 minutes on baking sheets. Remove to wire rack and cool completely.

*Substitute any coarsely chopped seeds or nuts -OR- omit and add 1/4 cup unsweetened cocoa and increase sweetener by 2 tbsp
**Substitute any flavoured extract

I am a food professional with Kraft Kitchens. I understand that trying to find a sugar free/nut free recipe can be a challenge. I hope you like this idea. I think kids would love it. Enjoy and happy holidays!

Fruit Kabobs with Lemony Dip
Prep Time: 15 min
Total Time: 1 hr 15 min
Makes: 10 servings, 2 kabobs and 2 Tbsp. dip each



1 container (6 oz.) lowfat/sugar free lemon yogurt
1/2 cup thawed Cool whip lite Whipped Topping
1 qt. strawberries
10 medium kiwi, peeled, quartered
6 medium bananas, cut into 1-inch chunks
1 can (20 oz.) pineapple chunks, drained



MIX yogurt and whipped topping; cover. Refrigerate at least 1 hour before serving.
INSERT fruit pieces evenly onto 20 small straws or wooden skewers to form kabobs.
SERVE kabobs with the yogurt mixture for dipping
