What Not to do!
This thread got resurrected and I decided I wanted to try it. I didn't however want to "fire up" the oven. Decided to try them in the Microwave.
I put all the ingredients (pecan pieces not chopped yet) in my mini processor/chopper (CusineArt stick blender/chopper) & pulsed till it looked right. Then I put it in 5 silicone muffin cups, and flattened a little. I started out to nuke them for 3 minutes, but stopped at 1 minute to rearrange. But then....... one started really boiling over, and turning DARK. I took it out, and started again. Well over they all went, but I let them go. Below you can see my results. The first one had gotten toooo dark, and burned, but some were just a little past caramel. Not too bad actually. But what a mess. And I tried tasting some too soon, and burned the roof of my mouth right behind my teeth ta boot! I put the one that I had removed back on the plate for the picture. As you can see, one of the others ended up getting as "well done" as the other one had. The first pic is a before the microwave pic.

thanks for the lesson, Billie. I make these cookies all the time. Some things really boil over in the microwave, and I'm not sure what makes that happen. But, based on your experience, this is one mistake I won't make.

You are welcome......... I think.
![]() No, really, I'm glad to share my experience. It was just one of those experiences I'd rather not have experienced. But now I know, and you see what can happen too. They may can be nuked, but not on high at least. I'll wait till I'm gonna have the oven on anyway, or make a larger batch. I don't want to cook 4 cookies in the oven. |

I quadrupled the batch the other night and cooked them in the oven, but I also have a toaster oven in which I can bake four cookies at a time if I want to. |

The original reason for the small batch was portion control. I figured if I only made 4 cookies that is all i could eat.

But the main reason I had never tried it was I never thought about making them when I already had the oven on, didn't want to heat the oven for 4 cookies, and just hadn't bothered to enlarge the batch (which did away with the portion control idea. I do think I would really like them, so might give it a try sometime either when I already have the oven on, or decide to make a larger batch & feel strong. ![]() I don't have a small toaster oven, and no place to put one. |

Kevin, these are so great. I get the best results with these on a silpat mat using a coarser ground meal. (I've made them with fine almond flour too, but it tends to spread out more.) I also have to watch the oven--if they get a little too hot, they do caramelize and burn quickly. But the taste is sooooo worth the effort. I'm wondering if you think this could be used as a crust for something. How would you do that if it's feasible? Bake it first, then add the toppings, or just let it bake under the desert? |
