Flax Goodies

I my versions of cocoa flax cookies and flax muffins. I make a batch of each, almost every week.

Do any of you have other flax recipes that you really like and would share?

I love chocolate peanut butter Dobie muffins. I eat them often. Lately I've been throwing in some shredded coconut, and next time I may try some chopped nuts in it. They are excellent warmed and covered with butter.

I've been having a big flax pancake for breakfast everyday lately.


2 eggs
1 packet splenda
1/4 tsp cinnamon
2T flax meal

Mix well and cook like a pancake. I cook half of it at a time to get 2 pancakes and I splash a little blueberry DaVinci's on it and spread with one ounce cream cheese as well. Yummmmm!

Thanks for this recipe. I've been making a fairly complex flax pancake recipe that made way too many pancakes, and I really couldn't scale it down because the ingredients were odd quantities.

Single serving flax bread

I got the original idea/recipe from the spongebob bread thread ad here is what I have ended up with..

In a 2 cup glass measuring cup add the following:

4 tbsp flaxmeal (I use golden flax seeds and grind them)
1/4 tsp baking soda
1 egg
1 tbsp oil
1 tbsp DaVinci's

Optional additions: 1-2T chopped pecans or other nuts, 1-2T sf chocolate chips, 1-2T unsweetened coconut, 1T cocoa powder

Mix dry ingredients then add wet ingredients. Cover and microwave for 1 minute and 35 seconds (this is the time for my microwave, you may have to adjust)

Put it on a plate and top with cream cheese.

You can use different flavors of DaVinci's. It's really good if you use DaVinci's caramel and nuts, or DaVinci's lemon and fresh blueberries. I like to make it with cocoa powder and raspberry DaVinci's.

Use your imagination! I've used different extracts or fruits (if allowed on your plan).

Cocoa Flax Cookies:


2 eggs (I use Egg Beaters)
1/2 C Davinci's (I use chocolate)
1 C Flaxseed meal
1/2 teaspoon bak pow
1/2 teaspoon bak soda
4 level Tablespoons cocoa powder
(sometimes I also add cinnamon; I love cinnamon!)

Bake @ 350 for ~10 minutes (on parchment paper or Pam sprayed sheet)

I get: 38 cals, 2.4 gm fat, 2.9 carb, 2.25 fiber, 2.33 prot/ per 1 of 16 cookies

We love these cold from the fridge!!!

I am going to try the Cocoa Flax Cookie. I have been making the Almond muffin recipe you posted. I have eaten them daily and make a new batch the minute I eat the last one. I love love love them. Today I bought some banana extract for my next batch. I am addicted.

Linda's flaxmeal pancake is really, really good. It is my favorite breakfast. Can't wait to try her single serving flaxbread. I'm only afraid I'll wind up have two breakfasts when faced with the difficulty in deciding on one of them.

I like to make a hot cereal using 2 T flaxseed meal, 1 scoop soy protein powder, cinnamon, splenda. Mix with water and microwave for 1 -2 mn. Mixture should be watery as it thickens as it cooks.

I also like several recipes from Linda Sue's recipe board

I would use 5 eggs, that's what the original recipe called for.
(I'm sure 4 eggs would be fine, too!)

1/4 C Egg Beaters = ~1 whole egg.

I made this for myself this morning. Put butter and sugar free syrup on it and thought it was wonderful. Looks like a pancake but tastes to me more like French Toast. I added a bit of vanilla to the mix before frying.

I have my new favorite breakfast. Thank you.
