Pumpkin bread
I am looking for a pumpkin bread/muffin/cake/dense/moist/sweet recipe... I have pumpkin, and want dessert... (can you tell I am hungry for pumpkin bread/cake) somewhere I saw recipes, and saved them, lost them...
any pointers on where to start to search? Thanks to all, christyjo |

you could always use the shannycake recipe and add in pumpkin puree...i've done this before and they taste great

ChristyJo, This is the one my family loves best carbers or non. Years ago I got this off Low-Carb Luxury Downeast Maine Pumpkin Bread
1 ( 15 oz)can pumpkin puree 4 eggs 1 c. light olive oil 1/2 c. water (I used vanilla Davinci) 20 drops liquid sweetners (I used 50 drops stevia) 2 cups splenda ( I use xylitol and erthrytol) 1 1/2 c. Vital Wheat Gluten Flour 1 c. Whey Protein powder 1 c. Oat Flour 2 tsp baking soda 1 1/2 tsp salt 1 tsp ground cinnamon 1 tsp ground nutmeg 1/2 teaspoon ground cloves 1/4 tsp ground ginger That is the recipe My tweaks, I doubled the spices,added 1tbs Gar gum and 2 tsp Lecithin and 2 tbs powdered butter. Beat all wet ingredience together. Sift all dry ingredients and mix into wet ingredience well. grease and flour 3 loaf pans 350 deg. for 55 mins or until toothpick comes out clean. More like 65 mins. It is dense moist and spicy I've tried many but this is by far the best. Great for Holiday gift giving. |

Pumpkin Spice Cake (a la Cathy) is here:
pumpkin bread I doubled this recipe, added 1/4 c walnut meats and 1/2 t nutmeg, 1/4 t cloves, 1/8 t ginger to each, and instead of Splenda alone, 1 Splenda Quik pak, and 1/3 c xylitol for the double recipe. I used Fat Replacer (Oatrim) for the Canola Oil (you could use Z-trim). I baked it in 1 large loaf pan, and 1 small disposable one. It made 41 oz of bread, so I will probably slice it into 1 oz slices, which will only be 41 calories per slice, and less than 2 1/2 Net grams of carb. This is every bit as good as my old high carb, high fat pumpkin bread. Bette Last edited by Bfranke; 10-18-2006 at 03:58 AM.. |
