Dixie Diners' Club Mashers also works wonders in faux potatoes. Or you could try mashed delicata squash instead of the cauliflower. There are a lot of options. (I think Ginny even uses a tablespoon of instant mashed potatoes to give it the right texture, if you can afford the carbs.)

Yes Kaye, if you look back at post #20 of this thread I did a variation using sweet dumpling squash i think.
