My rendition of Impossible Bacon Cheeseburger Pie

I was looking for something quick and easy for dinner to use a lb of ground beef.

1 pound ground beef
4 green onion, chopped
1 cloves garlic, minced
1 tomato, sliced
salt and pepper to taste
1 cup shredded Cheddar cheese
8 slices of bacon, cooked and chopped into bits
1/2 cup carbquik
1 cup sour cream
2 eggs

In a med. high skillet brown beef onions and garlic.
Drain grease and spread it out in the bottom of a 10 inch pie plate.
Layer tomato slices on top of beef.
Top with cedder cheese then top with bacon bits.
Salt and pepper.

In small bowl mix eggs, sour cream and carbquik until combined.
Pour batter over top of pie as evenly as you can.
Bake in a preheated 375 degree oven for 30 to 35 min or until top is golden and knife comes out clean.

Looks Delish! hmmm, I love to eat chopped serranos and cilantro on everything possible and this looks like a good candidate .

Kevin, looks delish. I assume you thought it was since you posted it? I think I have everything on hand for this except the tomatoes and think DH would like this too.

Kevin, I'm curious about your choice of sour cream in this recipe and your choice to use it instead of the more usual impossible pie mix with eggs. Does sour cream give it a crispier texture? Was it a taste thing? Was it the only thing you had in the fridge?

(BTW, this pie looks wonderful.)

I will use sour cream or mayo when I need something wet to mix with the flour and I don't want to use something runnier that would soggy up the thing I am making. To the best of my recollection that was the reason. I have no note in my journal as to why I used it.

Kevin just wondering if I can use almond flour for the carbquick ? as gluten doesn't agree with me. Any ideas would be a big help.

Since I have never tried it, my guess is almond would not be a good sub in this recipe. If I were to try I would most likely choose either a soy powder, soy protein, or whey protein as a non gluten sub.
