wow i wanted to make this NOW but ofcourse i dont have half the ingredietns like almond milk and coconut milk.
is there anything i can sub for those...i ofcourse have cream and reg oils... looks so GREAT! |

This is my new favorite thing to do with the cocnut pie. I take a slice and put it in a bowl and pour cream over it. I then mic it until warm sprinkle on some cinnamon and a squirt of whipped cream. This is soooo good it kind of reminds me of oatmeal. This has been my breakfast and dessert for a couple of days. I like the coconut pie warmed better than I do cold.

I make my own Almond milk (sub for Almond Breeze). You can make it in you Magic Bullet. For 2 cups (1 pint), I use about 1/4 cup almond meal. Put in your magic bullet (I use a jar on my blender). Pour small amount of boiling water in and process for several seconds. Then I put more boiling water in, and process again (maybe a 1/2cup). Process to try to blend the almonds as fine in the water as possible. Then add cold water to fill cup/jar. I then strain using cheesecloth or paper towel into container. (I've tried using coffee filters, it didn't work for me.) After it is drained well, add enough cold water to make 2 cups & stir. You can add just a touch of cream to make it creamer if you like. You may find you would like more almonds. I think some people use about twice that much.

I made this today, Kevin, and it was super. I had to wait until my husband went out of town, because he is VERY interested in desserts, but does not like coconut. I made it to share with 2 low-carbing friends, and they loved it also. Thanks for the great recipe.
