low carb coconut pie crust
Anyone have a recipe for this? Did you like it? Any info I should know before trying it. I am trying to make it for non lowcarbers so i can have a piece too. Carb count?

Okay from what I can tell, 1 and 1/2 cups of unsweetened coconut is 12 carbs and 1T of Almond flour is less that 1 carb and about 2 T spoons if butter is -0-, so the entire pie shell I found should only be about (rounding up) 13 carbs for the whole pie shell. Bake at 350 degrees until browned, watching carefully cause it burns easy, cool on wire rack and fill. I'll let you know after I try it. Also forgot to say you will need to a sweetener. (like a packet of splenda & add that carb in) I use a couple of drops of stevia, no carbs. Taste for sweetness to your taste.

I'm back and the pie is done and I added the below topping...and OMG! I also found out that you should be satisfied with 1/16 actually. I cut it into 8ths but the pieces looked pretty big so I just cut one of the 8th in half and it was great. So I guess that makes the pie itself 5 carbs a piece not counting the topping. I wouldn't think the topping would add anymore than about a carb to each piece...Help me out on the carb count if anyone can. The whole thing is just wonderful...NO lowcarb taste at all!!!
WHIPPED TOPPING 1 cup heavy cream 1 tablespoon sugar free instant chocolate pudding mix, dry 1 T Devinci Chocolate syrup I put it all in a bowl and beat on high until it looked like whipped cream and then spread it over the pie. filling part: a large box of Sugar free Chocolate pudding w/2 1/2 cups of Hoods low carb milk. Beat with wire wisk. Pour in absolutely cooled crust and top with the whip cream. Very good. Hubby, a non low carber had three pieces from the time he got home til he went to bed. Musta done something right! Too many carbs I think for induction. If anyone figures the exact carbs please let me know.
