Found this on my email:

Hot Cereal Recipe

1/4 cup flax meal
1/4 cup protein powder
1 teaspoon brown sugar Diabetisweet or regular splenda or stevia
1/2 cup cream or CC milk
1/3 cup water

Nuke on high for 2 minutes.

I make a hot cereal that is an "almost from scratch" version of a tweak I made years ago of a commercial flax cereal. In order of most to least ingredients by volume, it is capuccino shake powder, raw flax meal, toasted flax meal, toasted wheat bran, a spoon of instant coffee, a good dose of maple flavor, vanilla, salt and Splenda. (Walkers Diet still makes a capuccino flavored shake powder.) That cereal doesn't taste as good as any high carb hot cereal to me--it tastes MUCH better. (And that, in spite of the fact the appeal of flax bread, which so many love, is completely lost on me.) A little bit of nut pieces, like walnuts, and/or some good cocoa (like Ghiradellis) sprinkled over the top, is also good with it. (Have never standardized this as a recipe.)

Well, flaxseed meal is all fiber..and it depends on your protein powder..which usually has a couple of carbs..then depending on the sweetener..and also
what type of cream/milk you use..

Let's guess 5 net carbs..

This cereal sounds very good. I started thinking about hot cereal this week....so thanks all....I will try it very soon.

I looked on my carton of milk for a carb count....I'm going to try it with regular 1% milk and see what happens. It doesn't make the carb count incredulous and I'm not trying to stay under 20 currently.

Has anyone tried cocoa powder in this yet.....hey...~wink~ just planting the seeds.

No but I did use chocolate calorie countdown milk and it was yummy!!!

Try it with some cocoa pdr and some peanut butter. Yummy. I have several different recipes and I am lucky enough to occasionally find Atkins shake pdr at the local dent and ding store. Believe me the cereal with the strawberry shake pdr and cream on top is excellent.

I make an "oatmeal" mix that I eat several days a week. It consists of 1 1/2 cup flaxmeal, 1 1/2 cup wheat bran, and 1 cup of vanilla whey protein. Mix these all together and keep in the fridge. To make, take 1/2 cup of mix and put into a bowl with high sides. Add 1/2 +/- cup water (depening on how wet you like it) plus whatever sweetner you'd like (I generally add a few tablespoons of davinci carmel). Microwave for 2 minutes, then stir. I sometimes add a little cream or butter (not included in counts)

This recipe makes enough for 8 servings, and each serving contains:
154.4 calories, 7.4 fat, 3.8 cholesterol, 13.4 carbs, 10.8 fiber, and 15.6 protein. Total effective carbs are 2.6 per serving.

Thanks, Tim and Carolyn, for this idea!

My discoveries:

I liked the idea of a "mix," Tim, so started with your measurements. Then I ran out of wheat bran, so I used about 1/4 cup of oat bran. . .

It looked like it needed cinnamon, so I dumped it into the mix.

I used my Hot Shot 190 degree water tap. . .and do I need to say, you really need high sides on your bowl, especially if you use the HOT water. . .????

I think it needs a dash of salt.

This is a keeper. Especially made up in the fridge, and I love the protein addition!!!!

If you are watching your carbs, you need to watch out for oat bran. It's 3 gm per tablespoon. Wheat bran is only .8 per tablespoon. I use 1/4 C flaxmeal, 1 T oatbran, 2T wheat bran and a serving of protein pdr shake mix. And I put 3/4C hot water on top and stir. I have also been know to put in 1/2 T divinci.

Here is 1 I make when I am looking for chocolate for breakfast.

Low carb CoCo-Wheats(its unreal how much it tastes like it)

3 tablespoons ricotta cheese
1 egg
1/2 square unsweetened baking chocolate or equivilent cocoa
2 tablespoon sf davinci carmel syrup
a splash of heavy cream
1 tablespoon wheat germ

nuke syrup and chocolate till melted about 40 sec.

add the rest of the ingredients
then nuked it for 90 seconds
stir it
then nuked it for 90 seconds more

5 carbs

I tried a variation on the recipe Tim suggested, that was really wonderful.

I used 1/3 of the envelope of the "diet" oatmeal from Quaker, the one with more protein, and more fiber. . .it's too carby for me straight, but mixed with 1/4 cup "Tim" recipe and just a bit of the oatmeal. . .

As it is so popular to say these days. . .

This was really yummy. I'm not sure what choco-wheats are but I took the idea of adding a piece of unsweetened chocolate from Kevinpa's post. I also added some wheat bran.

It was really good. Though it kind of formed a big blob and I spilled it on the floor at work and it all just slid out of the cup so I didn't have breakfast this morning .

Thanks Kevinpa...will let you know...need to get some ricotta first. I have only certain brands of Ricotta I use and they get a little hard to find around my area and I have to make the rounds again on Friday.

"CoCo Wheats" low carb style~~~~~WINNER!

Kevinpa....I tried your recipe for "CoCo Wheats" and it was very delicious! I'm going to see how long it sticks w/me this morning.

My tweaks:

I didn't have wheat germ...used wheat bran.

I used White Chocoalte Davinici's (first one I grabbed in the cabinet) LOL. I needed mine a little more sweeter...so I added a little more than 2 Tbl. But, my unsweet chocolate bars were cut up and broken...so I had to guesstimate about the 1/2 square thing.

I used regular milk instead of heavy cream to save some fat/calories (about slightly less than 1/4 c.).

I'm not sure what the calories are...but I figured roughly and some guesses might be high because I just don't know. <250 for the whole thing?

45 for the Ricotta (I used lower fat kind)
70 for the egg
0 for Davincis
chocolate 35 (I'm guessing) +/-
wheat bran 35 (I'm guessing) +/-
milk 40ish (next time I'll use 2 Tbl. of cream...it's 35 calories)

I have been eating this cereal every day and wanted to let you know how I've tweaked it. I use:

3 Tbsp. Designer Whey Vanilla Protein Powder
Add 2/3 cup water and whisk together.
Add 3 Tbsp. ground flax
1 Tbsp. cocoa powder
1 Tbsp. Davinci SF vanilla
1 Tbsp. peanut butter

Micro for 1/2 minute on full power and whisk; micro for another 1/2 minute on full power and whisk; then micro on power level 5 for 2 minutes.

Pour half and half or cream on it.

Boy, does this ever fill me up till lunch time. I used to eat oatmeal every day for breakfast, and now I like this just as well. The reason I whisk the ingredients together so much is because the protein powder "clumps" otherwise.

I'm using my mix (see above) in the a.m., then spooning in prepared Steel Cut Oats and heating that. . . (I make up a weeks worth of SCO and refrig that. . .it takes time and a pan. . .so I like the ease of reheating )

My mix is more carb friendly than the Steel Cut Oats, but I want those (taste, texture, health benefits). . .so I compromise.. . .

So far they satisfy me until lunch.
