Sesame oil/Crack slaw ?
I've never (yet) bought sesame oil and will soon because I want to make Crack slaw.
I understand from reading on epicurious that there are two types available. Sesame oil comes in two basic types. One is light in color and flavor and has a deliciously nutty nuance. It is excellent for everything from salad dressings to sautéing. The darker, Asian sesame oil has a much stronger flavor and fragrance and is used as a flavor accent for some Asian dishes--taken from epicurious Which should I buy? The lighter or darker? Also, what do you use sesame oil for, other than Crack slaw? Thank you

I only see one kind where I shop and it's called 100% pure sesame oil. Kroger sells several brands but none of them say "dark" or "light". The regular kind that I buy is strong enough that you use only a tiny bit for flavoring a dish. You would never cook with it.

I made the Crack Slaw and thought it was okay, but then I sprinkled some parmesan cheese over it and I really liked it! Just thought I'd mention it!
This is the one I used, only I used all broccoli slaw. Crack Slaw Servings: 2 1/2lb lean ground beef 1 TBSP toasted sesame oil 2 cloves garlic, minced 3 green onions, sliced 1 C broccoli slaw 1 C cabbage, shredded 1 TBSP lite soy sauce Crushed red pepper flakes, to taste 1. Brown the ground beef until no longer pink. Remove the beef from the skillet, drain and set aside. 2. Heat sesame oil in the skillet over med-high heat. Add garlic and green onions; stir-fry for 2 min. Add the broccoli slaw and cabbage; stir-fry for 2 min. Add soy sauce, stir-fry for 2 min. 4. Return the cooked ground beef to skillet with vegetable mixture and season with red pepper flakes, to taste. Stir until ingredients are well combined and heated through, about 2 minutes. 5. Divide into two portions. I love this recipe. The original calls for brown rice. I use Mongolian Fire Oil (a slightly spicier sesame oil) and love the flavor. Named crack slaw by fellow Playgrounders because some say its so addicting! Also, I've used all cabbage instead of broccoli slaw when my grocer was sold out. I've also doubled/tripled the amount of cabbage. Surprisingly simple and delish! |

I buy the Asian variety ( color of weak coffee) and use it many ways. It has a wonderful flavor, but it is strong so use it sparingly. My quick "go to" meal is egg drop soup from DANDR. Simmer chicken broth with fresh ginger (I buy a knob, peel it, slice it, freeze it on a baking sheet, pop it into a zip-lock bag and take out what I need), simmer for about 15 mins, remove ginger, drizzle in a scrambled egg, cook for about 3 mins, add a few drops of sesame oil......yummmm
I also use it to flavor any quick sauted veggies...brocolli, cauliflower, green beans....Once the veggies are sauted, I hit them with a few drops...It adds a different (but good) flavor. Michelle

I use a really simple recipe for crack slaw.
Saute cabbage (I use bagged preshredded cole slaw and pick out the carrots!) in sesame oil. In the meantime I saute chicken breast fillets til cooked through. Cut up the chicken into bite sized pieces and add to the cabbage...done and yummy. |

I use pork stew meat for crackslaw and sautee with chicken seasoning. Then I sautee the broccoli slaw in olive oil (didn't have any sesame oil), I add chopped water chestnuts and mongolian fire oil along with the garlic, cayenne and soy sauce in the recipe.

I use the dark sesame oil from the oriental grocery store. Then brown a 1/2 lb of ground beef, add 1/2 diced vidalia onion, 1 package broccoli slaw and 2 packages angel hair slaw and a cup of diced ham. I stir fry this mixture together for a few minutes, then add a Tablespoon lite soy sauce and a can of chicken broth and cook it for about 20 minutes.
I love this stuff and make a batch every couple of days. I enjoy it cold as much a hot. Connie |

I've never refrigerated my sesame oil. I buy a huge can of it at the oriental grocery store and fill up a bottle at a time to keep above my stove and keep the rest of the opened can in the cupboard. Have been doing this for at least 20 years now. Connie |

That's nice to know. I've always heard that it will go rancid quickly if you don't refrigerate it so I've never taken a chance. It does sound like you use it a lot more often than I do though. A small bottle lasts me many months and doesn't take up much room in the fridge.

I cook mine with the lid on. Everything is soft when done. To my taste buds, this tastes like the inside of an eggroll. The broc slaw pkg is 12 oz and the angel hair coleslaw is 10 oz and I use 2 pkgs of the coleslaw. I pour 1-2 Tablespoons of the sesame oil into my cooking pan and as the pan gets warm I add the ground beef and brown it a little, then add the chopped onion and brown the onion with the beef a bit., not actually browning the onion, just browning the beef and the onion gets soft. Then I dump in the broc slaw, one of the packages of angel hair, then mix the whole thing together, add the chopped ham and the second pkg of angel hair, stir everything together and stir it all around for 5 minutes, then cover it and let it cook for about 20 minutes. It may take longer or shorter, I just cook it until it tastes yummy. I hope if you go to all this trouble, you end up liking the end result. Connie |

Thank you again RVLady. I've been under the impression that we weren't "supposed to" cook with sesame oil too - so this will be a first for me.
Your recipe doesn't look like "trouble" at all ~ in fact, it looks very fast and easy. Sometimes I practically need a picture drawn - ha! *Ü* |
