Cut them on the diagonal into 1/4 to 1/2" thick slices, panfry in a little oil til caramelized on both sides, and serve on picks with LC BBQ sauce for dipping.

Kevinpa had this great ucchini recipe that was dipped in egg then rolled in parmesan cheese and baked, about 4 days ago-do a search i'm sure it'll come up-it looked great! (He always puts pictures with his recipes which is soooo nice) OOOPs! I thought this was a zucchini thread-sorry!

Cut into bite size slices, saute in butter, add a couple cups of shredded cabbage and cook until cabbage is tender. Top with a spoonful of sour cream. Yum!
