How do cucumbers taste cooked?
I've always eaten them raw but am trying to add more and more veggies to my omelets in the am and was wondering if they taste okay cooked.

I have a beef and cucumber stir fry recipe that is pretty good. But you don't cook them long. It's a revipe by Martin Yan (aka: Yan can Cook). I'll see if I have it somewhere for you:)

I've made this recipe several times and really like it. It's a nice alternative to cucumbers in salads. The cucumbers retain a little of their crispness. I also add a little grated Parmesan cheese at the end of cooking.
Creamy Buttered Cucumbers 1 pound cucumbers -- peeled 1 tablespoon salt 2 tablespoons butter 1/2 cup chopped onion ground black pepper -- to taste 1/2 cup sour cream 1 pinch dried dill weed 1. Cut cucumbers in half lengthwise and scoop out the seeds. Cut into 3/4 inch chunks. If the chunks aren't firm, place them in a colander and sprinkle with salt. Let drain 20 minutes (if they are firm you may omit this step). 2. Place butter in a medium to large skillet over medium heat. When it melts, add the onion and cook 5 minutes. Stir in the cucumbers and cook another 5 minutes. Sprinkle with black pepper to taste. 3. Reduce heat to low and stir in sour cream and plenty of dill. Stir and serve warm. |

My mom always fried them like squash. So maybe, slice em thin and coat with parm. cheese, or carbquick or you fav., and fry them up. I love them and so do my kids.

We tried them on some grilled shish kebabs after watching Bobby Flay use them - they turned out good, kinda like squash flavor!

You never know until you try. Some recipes seem like they can't possibly work, and they are terrific. And some seem as if they have to be delicious, and they don't come through. So go for it! And be sure to tell us your results.

It will probably be fine. I have a mock apple crisp that uses zucchini or chayote and you'd never guess it wasn't apples! Give it a try and report back! :)

Once I took a mix of diced cucumbers, tomatoes, onion and peppers, fresh basil, and fresh mozarella (that was originally a cold salad) and sauteed it briefy, then added eggs to make an omelette. It came out delicious!

I love them in stir-frys.
