Speaking of eggrolls, do you know you can buy spring roll wrappers in any Asian store and make spring rolls (these are just veggies, no meat) that are wonderful. You get a lot of wrapper for around 1.00 and they are frozen and keep really well. Each wrapper is 1 or 2 carbs, can't remember off hand, but know more than 2 and they taste just like takeout.

Here is the recipe. I thought I had posted it here before!
I went to the most awesome Asia market yesterday!! It was filled with so many wonderful things and the store was HUGE!! Wish I knew what half the stuff was used for!! Got the spring roll wrapper, 25 for 99 cents!! Made my own spring rolls for dinner last night. Here is what I did: 2 cups bok choy, shredded 2 ribs celery, sliced long ways really, really thin 4 scallions, just the green part, sliced thin 1/2 cup bean spouts 2 mini carrots, grated 1 cup cabbage, shredded 1 tbls Sesame 1 tbls Olive Oil Enough oil of choice to cover the rolls half way up in a heavy bottomed pan. Heat oil. While oil is heating, stir fry all ingredients in Sesame and Olive Oil for about 3 to 5 minutes. Put a 1/4 cup amount in the middle of the spring roll wrapper, wrap and fry. These brown quickly, so keep an eye on them. About 2 minutes on each side, on medium/high heat. Drain on papertowel, dip in soy sauce or asian sauce of choice and enjoy!0. I made six with this recipe, but you may have more or less depending on how full you make the rolls. __________________

Beeb: Gosh, girl..those look good..I looked up "homemade" spring roll wrappers..and they call for one cup of rice flour/4 Tbs. of regular flour and would have about 10 carbs
per 1/12 of a recipe.. Does it say on the package that they are only 2 carbs??? I'm sure they are very thin, too..yummmy. |

Beeb, these look awesome! I really want to try them, but I'm having a hard time finding the lower carb wrappers. What is the brand name? I'm thinking I might be able to order them online.
