Ideas for on the road?

My dh and I are going on a travel trailer trip with friends. We'll be gone for 12 days and I don't want to gain weight!!! We'll have access to a microwave but the stove isn't very big and would heat up the trailer. We'll also have a refrig. I need some ideas of things to bring on the trip for breakfast & lunch. No one else will be lcing so I'll face doughnuts, chips, etc. and I want to be prepared. We'll probably eat out every evening and that will be a real challenge but I think I can manage that. Any ideas on what to bring along?

*fruit
*deli meat & cheese

I second all the below and add:

pimento cheese (check out linda sue's)
roasted nuts (roast your own)
Chese chips- also on linda sue's site (and you can use these as regular chips for dips, etc)

You need snacks!
Peanut butter cookies
Pork rinds w/dip
wings (made ahead so you can just reheat them), celery and blue cheese dressing!
string cheese
dill pickles
celery stuffed w/cream cheese
green olives

I'd be sure to have some decaf w/cream and Divinci's on hand when you want a little something after dinner to. Or, if you're an iced tea drinker, I recommend sf raspberry syrup added.

I'm sure I'll think of more to add later

we are going on a road trip soon and i am also getting together snacks. i bought dry roasted peanuts, i'm making some venison jerky, and also have string cheese. i also make roll ups with low carb tortillas with cream cheese mixed with black olives, roasted red peppers, minced onions, garlic and chedder cheese-- spread that on a tortilla and then some cooked chicken. sometimes i use deli sliced chicken, sometimes pieces from a rotisserre chicken, and occasionaly i actually cook it. roll it up and i cut in half. i wrap each half in saran wrap and place all of them in a gallon sized ziploc. they keep well for a couple of days. sometimes we dip them in salsa. also for something sweet i'm making the strawberry pie recipe here and putting it in disposable containers to bring with.

Thanks for all the super suggestions. I've got my grocery list started and feel much better about the situation. Good idea about making extra...I know my dh likes to munch on my lc food.

i'd bring a couple bags of trader joes flax chips and a couple jars of salsa, stallone puddings and couple of shakes to kept cold in fridge. have fun!
