delicious experiment

Hello everyone. for the first time in my life, i havent been eating enough-calories or carbs. to fix this, i've been trying to incorporate more veggies and fruits. last night i bought some baking chocolate (no sugar) and melted it with a little butter and two splenda packets. i took these lucious strawberries and dipped them in the dark chocolate. YUMMMY. low carb (chocolate 2 carbs), splenda packets (2 carbs), strawberries 1.7 per 1/4 cup). I highly recommend this if you need a sweet fix.

i've had chocolate covered strawberried before but never with bakers chocolate. the chocolate can be quite bitter but dont put too much sugar in it because the natural sweetness of the strawberries would be overpowered by the sugar. chocolate chips can be much higher in carbs so make sure that its baking chocolate. two servings need no more than one square of chocolate

i do this for denny with macadamia nuts and strawberries. i make a ganache.

1 square unsweetened chocolate
2 tbsp heavy cream
1 tsp fiberfit
1 pck of sweet one
1/2 tsp of erythritol
1 tsp sf davincis

warm the cream and all the sweeteners in the micro till very hot but not boiling. crush up the chocolate square and melt it into the hot cream. if necessary nuke for about 10 seconds at a time stirring after each.

then measure out about 1/2 tbsp and drizzle over 6-8 macadamia nuts or drizzle over strawberries. even just a small drizzle over the strawberry or other berry is enough to give him his chocolate fix.

afterwards i cover the ganache with saran so it sits on the surface of the ganache then wrap with another piece of saran (chocolate absorbs flavors from the fridge very easily) and put in frigerator. keeps about a month. i just reheat 1/2tbsp or a 1 tbsp at a time using a bowl floating in very hot water.

Oh, Pooti, that sounds soooo good! Nice to run into you, BTW! Have you tried the recipe for the Reecees Peanut butter cups in the recipe room? OMG--those are to die for! Only thing is I never found the little muffin tins so I just make them in large muffin tins. Still very few carbs. And best of all I was able to eat as many as I wanted and always lost weight! Be sure and try them!
