Pound cake with pics
![]() I made this today and it turned out great, I used a recipe I have made for years and only changed the flour and sweetners. I used the jena-marie cake flour blend, it turned out moist and very good and doesn't taste any different than it did when I made it with all the carbs. and white flour. I will post the recipe if anyone wants it. Beverly |

One Step Pound Cake
2 1/4 cups Jena-Marie cake flour blend 2 cups sweetner 1/2 tsp baking soda 1/2 tsp salt 1 tsp. lemon extract 1 tsp vanilla extract 1 cup butter softened 1 cup sour cream 3 eggs Preheat oven to 325 degrees In a large mixing bowl combine all ingredients, blend at low speed, then medium speed for 3 minutes scraping bowl occasionally. pour into either a bundt pan or loaf pan that has been sprayed with pam. Bake for 60- 65 minutes Cool I used splenda, E, and divinci coconut SF syrup instead of the lemon and put in some unsweetened coconut. next time I am making the lemon. This is Joan's recipe I just made changes for the low carb version. |

What is Jena-Marie cake flour blend? Can I find it in a store or does it have to be ordered??

You can buy her bread and cake flour blends at her web site or get the recipe from the same site and mix it your self, most of the ingredients can be gotten at netrition.
The carb count for my cake is 2 net carbs my cake made 12 slices. |

I made this yesterday.....added maybe 3/8 t lemon oil, 2 T lemon juicee and 2 T Poppy Seeds. I used the low fat sour cream. I also wanted more protein, so I used 75 g All the Whey protein powder and 1 1/2 c Jena Marie Cake flour, and 1/2 t Baking Powder. And I used 1/2 the butter and 1/2 Z-trim.

I used the 5000 wheat protein isolate and the wheat resistance starch. Bfranke I am glad you liked your results. I love this flour.
