Fried Cheese Crackers Help/Question

I love these for dips and salsa but I can not figure out the cal, carbs, fat?

I took 1 oz of cheese, cut into 5 - .2 oz cubes and fried in the microwave until crisp. The 5 chips now wiegh .5 oz.

Do I figure the cal, fat, carbs on the 1 oz (before cooking) or the .5 oz (after cooking)?

Figure it on the BEFORE cooking info - none of that has changed, they have simply shrunk up due to moisture evaporating.

What about all the oily fat that is on the parchment?

I am wishfully thinking, I can not count that!!!??

I don't think that is wishful thinking at all. I also have an awful amount of fat draining off so I don't see why you should count the calories you aren't eating but are washing down the drain.

But then without the moisture you have a concentrated form so I don't know if just going by weight is a good calculation either. Is it possible for you to weigh the runoff of fat and subtract just that from the original weight?

To be honest, I wouldn't worry too much if you are using just one ounze of cheese unless you do this several times in the same day and it adds up alot. Sure is good too so it is tempting to overdo.

I don't think that there would be any consistent way to count them after cooking. I find that some days more grease comes out of the cheese than on other days. I don't know if that means there was less fat in the cheese to begin with but I usually use the same brand and kind of cheese each time so that shouldn't be the case. All you can do is count how many crisps you get from a package of cheese and divide the total carbs by that number. I find that almost impossible to do though, because I always end up "sampling" a few while I'm making them, LOL. I've had to quit making them because I sometimes sample them until they're gone.

To be honest, I'm not that worried about the carbs because there is not a LOT of carbs in cheese, I am more concerned about the fat and calorie counts.

I just love them with salsa and, when I really need a crispy salty chip!!
