Vidalia Onions?
Are vidalia onion induction-friendly for Atkins??? Anyone have good recipes for them if they are?

Onions in general are really not in induction and especially vidalia onions. They are sweeter and have more carbs than the red, regular yellow, or white onions. When I make onion soup even though the recipe calls for a sweet onion I get a regular yellow onion to cut some of the carbs.

Onions are allowed, in limited amounts, on Induction... you're better off for the carb count to sub either green onions or yellow (non-sweet) onions if/when you use them, though.
Vidalias, and other sweet onions, have more sugar content, which translates to the higher carbs. |

Just last week a friend and I were discussing Vidalia and other sweet onions vs. regular yellow onions so I looked them up on the USDA site and also a Vidalia onion site. Believe it or not, sweet onions are actually lower in carbs than regular onions! I was very surprised. 100 grams of regular onion has about 9 net carbs and 100 grams of sweet onion has 7 net carbs. I don't remember the exact numbers from the Vidalia onion site now, but it was somewhere in between the two. Here are the numbers from the USDA site:
100g Onion: 10.11 carbs 1.4g fiber 100g Sweet Onion: 7.55 carbs .9 fiber |

Mmmmm we got lots of great Vidalias here in Georgia right now. I cooked a piece of one on the Formen grill to go with my hamburger patty and lowcarb barbque sauce. Delicious!!

I just ordered some Vidalia's from an online site. It will be my first time to try an actual sweet onion. Oh, they claim they are sweet onions here in South Texas, but I have yet to find one that is even close. Most of those sweet #1051's just make me cry every time I cut one up. But oh, how I love me some onions, esp. on hamburgers. Nice to know the Vidalia's are lower carb being sweet and all.

Thanks for the info LindaSue. We're not on induction but I've tried to use onions sparingsly subbing scallions alot. But we love Vidalia onions and there is no substitute. Just bought a sack of them.
