Can I just say (OMG) this was awesome!!!
I had bacon and a very boring iceberg lettuce. And it was the best dressing/salad I have had in a long time. Thank you so much 5Scat4me for posting such and easy and wonderful recipe. |

I went to a baby shower a couple months ago and they had a version of this salad I think! Theirs had pine nuts in it too. Delish! I cant wait to make my own.

I've been eating every salad I've made for weeks with mayo,vinegar and stevia. So similar to the ingredients. Its so good tastes a lot like miracle whip to me which is what I always liked on salads before.
I will have to try this whole recipe it looks so good. I could live off this salad everyday! |

When I was a little girl, I grew up on grandma's german potato salad. I loved it. I made this salad tonight and it reminded me of those days. It was delicious and easy to do. THANKS for a new favorite!!

We had tonight, and I added Linda Sue's avocado.
My gosh my husband Jay told me 4 times how much he liked the salad. He said you can make it tomorrow. I made it for 4 portions and I had one. The salad is gone. That must say something about it to you. Thanks mucho. |

Count DH and me in as converts. We're generally not too crazy about sweet-ish main dishes, but this was very good. I had some leftover chicken that I added as well. BTW, I find it less mess and very convenient to cook two pounds of bacon at one time. I leave the strips a somewhat underdone, drain on paper towels, and put in zip lock bag, which I freeze. I pour the cooled grease into a covered container that goes into the fridge. It's easy to take a few slices from the bag and finish cooking/crisping in the microwave or toaster oven. Thanks, 5cats.

If you want a low cal/low fat no carb sweet spinach salad dressing along these lines you can use SF Maple syrup (Walden Farms is sweetened with Splenda, no sugar alcohols) with equal part vinegar (I use champagne vinegar which seems to be less acidic than most), add some dijon mustard and perhaps a touch of SF raspberry syrup (from Monin or DaVinci). Add bacon or use Oscar Mayer Real Bacon Bits for extra flavor. No extra sweetener or mayo is needed -- the Maple Syrup is sweet enough (and thick enough to hold the dressing on the leaves nicely.)
Hey, the lower the dressing stats, the more liberally I pour the stuff on -- I admit to being a dressing guzzler, and with this dressing I can eat my soup. . . uh, I mean salad (!). . . guilt-free. ![]()

I had forgot all about this salad!! I use to make it all the time in 2007!!! Sooo glad someone bumped this thread up again!!!! Thanks!!! I use to fry up a entire package of bacon...put the bacon grease in a tupperwear cup in the fridge and just take out a spoon or two at a time and zap it in the microwave, then mix!! Yummmy!!! Thanks Again!!
