Yocheese Carb Count ??
I hate to beat a dead horse here but.... I have yet to read a yocheese thread that really explains how to figure the carbs that are left in the cheese once you drain the whey out of it.
I made my first batch yesterday using Stonyfield Farm organic yogurt. I used a 2# (4 cup) tub. The nutrition information reads serving size 1 cup, carbs 16g and fiber 3g. Once I drained it in the frig overnight, I ended up with 1 1/2 cup whey drained off and 2 1/2 cups of yocheese left. Now, I understand that I have drained off carbs but I have also drained off volume. If the yogurt figured out to 13 net carbs per cup before I drained it why would it be any less now? Does the whey have more of the carbs in it than the remaining cheese? I mean does the whey have more carbs per cup than the remaining cheese and therefore you are draining off more carbs per each cup of whey then the net carbs would imply? If that is the case can someone show me/ tell me where that information came from? I'm kind of one of those people that wants proof just so I can be comfortable with the information in my own mind. I read on several posts that lots of people are figuring yocheese at 4 net carbs per cup but I just can't see how they come up with such a low figure? Is there a food scientist in our group that can shed some factual light on this subject? Any help apprecitated, Darcie

good questions. This is the same yogurt I bought and drained. I dont know how many carbs are lost though draining, but I figure some...

It's my understanding that those lovely "active yogurt cultures" found in yogurt consume the lactose in the milk (which gives it the tangy taste) and in so doing a cup of yogurt is actually approx. 4 grams carbs.
Nutrition labels figure carbs through a process of elimination....they figure actual fats and actual proteins and then list the balance as carbs. Yogurt is one of the foods that is actually lower in carbs than the mathmatical formula because of the active yogurt cultures consuming the lactose. Heating yogurt will destroy the active yogurt cultures, but I'm not sure if that effects the carb count if they've already consumed most of the lactose. It's best to consume it without heating so those "cultures" can do their beneficial thing for your intestinal tract. That being said, one of my favorite ways to cook chicken is tandoori, in which you marinate the chicken in yogurt and spices overnight. It tenderizes the chicken and gives marvelous flavor. Of course, the cultures are destroyed when the chicken is cooked....

I am sure I heard on these boards that ****** considers a cup of whey to contain 12g of carbs. So yes, I agree that you're definitely ditching some carbs by draining!
