Cream Cheese Cupcakes

Okay- I know I've been asking about these and I did try two different recipes one with almond extract and the other with pumpkin pie spice!! YUMMY!! I'm wondering if anyone has tried them with less Splenda. They are so yummy and perfect for us because we love cheesecake!! They are soo sweet though, can I take the Splenda down to 1/4 cup??

if you have any Davinci's syrup you could subsitute that in for the splenda

I always put a 1/4 of splenda and a 1/4 cup of my favorite davinic's syrup and they come out great! I hope that helps.

You're right, they are too sweet and you sure can cut the splenda. They turn out fine.

I've made them about 20 different ways now and have yet to be able to screw them up. I do cut the splenda and I've even made savory ones with cheese and dill or cheese and onion. They have all been great.

Splenda questions

I tried these last night after reading the post with the recipe yesterday.

However, when I went to make them late in the evening (to late to go to the store) and I was out of the boxed Splenda. So, I had to open the little packets of Splenda to get 1/4 cup. (Yes, I opened 20 or more packets!!!).

My question is: Do the little packets of Splenda have the equal carb value of the boxed Splenda? The boxed Splenda seems to be more "puffy" than the little packets of Splenda.

Okay here's a question. I did some figuring with these "cupcakes".
Cream cheese is .8 grams of carbs
Eggs are .6 grams of carbs
I'm pretty sure Splenda and vanilla is 0 carbs so....

That would be a total of 2.8 carbs. Now, we would divide this into 12 right, because the recipe makes 12 so wouldn't that make them less then one carb for each serving??? LOL LOL They are just so darn good and I want to eat them all day long. I need to know what the carb count is though and I have read so many different counts. HELP!!! LOL LOL

For the whole recipe:

1769 Calories; 167g Fat (84.1% calories from fat);
45g Protein; 26g Carbohydrate; 0g Dietary Fiber;
872mg Cholesterol; 1451mg Sodium

For 1 "muffin" (1/12th of recipe):

147 Calories; 14g Fat (84.1% calories from fat);
4g Protein; 2g Carbohydrate; 0g Dietary Fiber;
73mg Cholesterol; 121mg Sodium

For 1 "muffin" without using granular Splenda
(use liquid Splenda or Davinci or other syrup):


143 Calories; 14g Fat (86.4% calories from fat);
4g Protein; 1g Carbohydrate; 0g Dietary Fiber;
73mg Cholesterol; 121mg Sodium

This last one is the way I do them...

Ok... I'm gonna say this and then duck and run... but the fat content in these is almost high enough to qualify for a fat-fast food!!! (90% of calories from fat)... Three days of nothing but cheesecake cupcakes - what an easy fast!!!!! LOL

The boxed (granular) Splenda and Splenda in packets are essentially two different products, and don't measure the same...

Granular Splenda (in the box) equals about cup-for-cup with sugar, as far as sweetness goes.

The packets each = 2 teaspoons of sugar (sweet-wise).

24 packets = the sweetness of 1 cup of granular Splenda (= 1 cup sugar)

Each cup of granular Splenda contains 24 carbs, and each packet contains 1 carb (technically, .9, but 1 is safe)

I'll bet you have very sweet cupcake/muffins.

I wish I had never looked up the recipe for these darn things! I started to crave them, so I've had to stop making them. Maybe when I am closer to my goal or for one treat a month or something. They really are fabulous!
