Salad Dressing
I'm trying to find a sugar-free salad dressing...any suggestions?

Make your own! It's easy and good. I use 2 parts olive oil (1/2 extra-virgin, 1/2 regular), 1 part vinegar (usually a tablespoon of balsamic and the rest red wine), garlic salt, freshly ground pepper, dried crushed basil, and a teaspoon of Dijon mustard. Shake it all up well. It keeps at room temp for a couple weeks if it lasts that long, and it's wonderful. You can add a teaspoon of Splenda if you like it a little sweeter.

Thousand Island Dressing:
Ingredients: 1/2 cup mayonnaise 2 tablespoons lc ketchup 1 tablespoon white vinegar 2 teaspoons sugar substitute (you can omit this, if you don't want it sweet--it tastes fine without it) 2 teaspoons sweet pickle relish (I use dill relish, but you can buy the splenda sweetened kind or pickles and chop up for relish) 1 teaspoon finely minced white onion (I used dried onion) 1/8 teaspoon salt 1 dash of black pepper Directions: Combine all of the ingredients in a small bowl. Stir well. Place dressing in a covered container and refrigerate for several hours, stirring occasionally, so that the sweetner dissolves and the flavors blend. Makes about 3/4 cup. Another type salad dressing I make a lot is:
(sorry, I don't really measure, just use enough til it looks right) The mayo, sour cream and avocado, etc. would be in equal amounts, like 1/2 cup of each--hope that helps. Mayo sour cream pureed avocado or blue cheese or feta cheese or finely chopped cucumbers Small amount of olive oil to thin cracked black pepper (optional--but I love it!!) This type dressing is especially good just on lettuce or with lettuce and celery. Something about the blue cheese with the celery is pretty tasty. Last edited by SugarBabi; 01-28-2006 at 04:11 PM.. |

You have to try this!! It is a recipe from my grandmother, that I adapted using Splenda... My DH and sister both loved it too!
German Salad 3 slices of bacon 2 tbsp. of vinegar 2 tbsp. Splenda 2 big tablespoons of mayo 2 hard boiled eggs, chopped Salad greens Prepare a salad as usual with lettuce and favorite veggies. Put in fridge. Fry the bacon and drain on paper towels. Save the grease! Let it sit until it no longer spits (10-15min). Add splenda, vinegar, mayo and eggs to the grease and stir until mixed and warm. Pour over your salad and toss. Crumble bacon pieces over the top and enjoy! This is my favorite salad and totally sugar free! |

My favorite is the Blue Cheesing Dressing recipe in the back of Atkins book -- I could eat it by itself for lunch!
(This is from memory, so you might want to double check before you make it if you have a copy of the book). 4 oz. blue cheese 1/4 cup mayonnaise 1/4 cup sour cream 1/4 cup olive oil (add more if it seems too thick) 1 tablespoon white wine vinegar 1 teaspoon mustard (optional: a drop of worchestershire, tabasco, salt and pepper to taste) |
