Hi..
Anna..Steel Cut Oatmeal is Steel Cut Oats..smashed..I learned this the other week..LOL.. I have made them with both items..and they are fine..I didn't precook the oats..and they were fine...I wouldn't cook the oats as they would be mushy.. |

Just wanted to add again that these are the best!! I made them this time with dried mixed fruit and almonds and they are to die for!!!
I have found that if I cut them after they have cooled alittle and then put them back in the over for about 10 minutes they are so nice and crunchy!! Thanks again, CarolynF! |

I am bumping up this recipe! I did a search for granola bars and I made this... really yummy but my stomach didn't agree. Even after only eating one serving (which was 1/8 the way I cut it)
I used diabetisweet brown sugar in it so I'm thinking that might have done my stomach in so I am going to try them again without it. I altered the ingredients a little to cut down on the calories and it was still really yummy! Thanks for the recipe. |

Finally got around to trying these - haven't had much time for playing in the kitchen lately - and it is such a terrific recipe!
I made them pretty much like the original version, but after I cut them into bars I decided they weren't quite sweet enough for me. So before I did the second baking, I brushed them with a bit of the polydextrose syrup that I keep around - I used the maple flavor. The finished bars had a nice sheen and crispy top.....and were perfectly sweet! I'm going to try a lot of the other tweaked versions as soon as I have a chance. |

Thanks to everyone who has tried and tweaked this recipe! Here is mine...
1/2 cup flaxseed meal 1/4 cup oatmeal 1 cup almond flour 1 teaspoon baking powder 1/4 cup Whey Low (sugar substitute of my choice) 1/4 cup Splenda brown sugar 1/2 teaspoon salt 1/4 cup sugar free mini chocolate chips 2 tablespoons vanilla (LOVE vanilla) 1/2 stick butter, soft 5 tablespoons peanut butter Preheat oven to 350'. Mix dry ingredients. Blend in vanilla, butter, and peanut butter. Spread in 9x9" pan (I lined the bottom of the pan with aluminum foil, didn't have parchment paper.) Bake for 30 minutes. Again, thanks to everyone who made this recipe possible! |

OMG!!!
I made these. last night, and they are wonderful. I started with Carolyn's recipe, and added all the tweeks that I read. Ha! I added all the goodies.......nuts, coconut, sf chocolate, a few raisins, and even did the "drizzle" on top, with sf chocolate. I really missed granola, and I'm a happy camper, now. Thanks to all you tweekers! :blush: There must be a better word for this, than "tweeker"! I don't know what the carb count is, but, I'm not gonna figure that out, until they're all gone, cause I'm gonna eat these up, real quick.

This is a heck of a long list of ingredents, but so worth it....
1 cup flaxseed meal 3/4 cup oatmeal 1 1/2 cup almond flour 1 tsp. cinnamon 1/2 cup Splenda 1/4 cup Poly D 1/2 tsp. salt 1/4 cup sliced almonds 1/4 cup unsweetened coconut 1/4 cup unsweetened chocolate chips 2 tbsp. imitation honey 1 tbsp. vanilla 1/4 cup coconut oil (softened- not melted) 1 egg white 1/8 cup cream 1/8 cup water Preheat oven to 350*. Spread parchment paper in 9x13" pan. Mix dry ingredients (down through chocolate chips.) Stir in the rest of the ingredients. Spread in pan. Bake for 20 minutes. Cool for about 20 minutes. Cut into bars and bake at 300* for another 20 minutes. |

I don't know the carb count, too afraid to check. :blush: It does make 24 good size bars and tastes a lot like regular granola. Sometimes I will cut the bars onto thirds and make bites out of them. My kids love it, even got my brother hooked on it. I eat one once in awhile when I want something kinda sweet, the kids eat them often. Would much rather they eat these than store bought ones.

Yummy's Girl, this is the basic recipe that I used. It is Carolyn's recipe. But, I used 1 tablespoon cinnamon, and added 1/2 cup coconut, small handful of sf chocolate chips, all flaxmeal instead of flaxseeds, and, when they were done, I drizzled sf chocolate over them. Baked them on a cookie sheet, spread thin, at 350 for 20 minutes, cut into bars, and baked another 10 minutes to crisp up. These are wonderful! They taste just like granola, and I could eat the whole batch at once!:blush: See all the tweaks! You should see my recipe page.........all scribbles!
Crunchy Granola Bars 1/2 cup of flaxseeds 1/2 cup of flaxseed meal 3/4 cup of oatmeal..use the steel-cut if you can 1 1/2 cups of almond flour 1 tsp. baking powder 2 Tbs. cinnamon 1/2 cup of Splenda (to taste) 1/4 cup of Poly-D (optional) 1/2 tsp. of salt 1/4 cup of chopped almonds or pecans, etc.. 1 tiny box of raisins (optional) 1/2 stick of butter, softened CC milk or cream (1/4 cup or so) |

I've been wanting to make these but I do not have all the ingredients yet so I'm waiting - I'll admit I'm not a very good tweaker so I'm a little scared to make them for fear that they won't turn out right and I'll waste the ingredients. One of these days I'll just jump in and make them.
