Gramma's German Salad for induction

I post this every few months for any new people. It really helped me with induction. It is a recipe from my grandmother, that I adapted using Splenda... My DH and sister both loved it too!

German Salad
3 slices of bacon
2 tbsp. of vinegar
2 tbsp. Splenda
2 big tablespoons of mayo
2 hard boiled eggs, chopped
1 bag of salad plus salad veggies

Prepare a salad as usual with lettuce and favorite veggies. Put in fridge.
Fry the bacon and drain on paper towels. Save the grease! Let it sit until it no longer spits (10-15min). Add remaining ingredients to the grease and stir until mixed. It should still be warm. Pour over your salad and toss. Crumble bacon pieces over the top and enjoy!

I also love this mixture ( when skipping the bag of salad)...over steamed Cauliflour! (YUMMY, kinda like German Potato Salad.)

We had it over baby spinach for dinner last night, with some pretty (raw) Red Onion rings added ...
Looked like a real "class act" plate.

5cats4me, that sounds delish! I'm wondering how many servings you consider this to be since you're using a whole bag of salad greens. If I were to just want to make two servings, should I reduce the "dressing" ingredients?

This will make 2 meal size portions (it's really a meal in itself!) or you could get 4-6 smaller portions, depending on how many extra veggies you add. I find that when I make the recipe with 1 bag of salad, it's perfect for two people if you're having it for dinner. Cut the dressing in half if you're using it as a side and using less lettuce.

5cats4me - I have been making this salad ever since you posted it back on 1/18/04!

Awesome German Salad!!

Even when we "fell off the wagon" I still made this salad. It is really good over spinach and is a staple in our house. I have handed out the recipe with the link to friends and family at least a dozen times! I need to re-print the recipe by now because mine is so used! I am actually serving it tonite with Pork Chops Alfedo!!

I made this salad for dinner last night. It was really good! I enjoyed it a lot! I used plain white vinegar, worked beautifully. My question is, has anyone used a different vinegar, white wine, red wine, any others? How was it?

I almost always make it with Cider vinegar but have made it with Balsamic (not so L/C). It is great both ways.

I have found the dish I am taking to my friends Superbowl party! This is SO good, and easy to make! Heck, I made extra eggs, and now I have egg salad too! Heehee

I always bump this recipe when I've been away from the boards for awhile. It's one of my favorites and it makes me feel like I'm splurging but it is induction friendly!!
