Are these really crumbly for everyone else or just me? Flavor is good, but they are hard to eat because they just crumble right up.

I copied this from the first post.
2 8oz. pks. philadelphia cream cheese 1/2 cup sweetener (I use spenda) 2 eggs 1/2 tsp. vanilla Soften cream cheese about 40 seconds in microwave. Add other ingredients. Beat with mixer till smooth. Pour into 12 muffin pans lined with the papers. Bake at 350 for 20 min. |

I made them using the 18 minutes/open the oven door method, and mine still sunk in a tad. I went ahead and tried one ... it was good ... but I am sure it will be much better tomorrow.

I had one for the first time this morning with my coffee.
HEAVENLY! I am going to eat them all week as a "pre breakfast" appetizer! My next order of business is to make oopsie rolls for my burgers. Never made those before either. |

I made a 1/2 batch this morning. I chopped some pecans and put them in the bottom of the cups, sprinkled with a little splenda and poured the mixture over them. I added 3 tsp of sour cream to the mix as well and cooked it over a pan of hot water. They look like an earthquake hit them - all cracked and I am sure they will sink. Don't care one bit if they taste like cheesecake and not eggy cream cheese.
Thanks for the recipe! I am doing a modified Atkins for my DH with no protein powders, soy products or fake products - real food, vegetables and protein. Because we need different eating plans it's nice to find recipes that we can share like these. Off to scout out more recipes for tonights dinner - thinking either Steak or Dottie's Hamburger Scramble. Meg

Just ate my first one! Yummy! I used sf caramel instead of splenda, and topped it with a tbs of peanut butter. With three slices of bacon, it is an amazing breakfast! I cannot wait to try them with something savory- I am thinking spicy sausage and cheddar cheese.
Here is antoher idea I am thinking about- you know those peanut butter cookies that you make in mini muffin tins and then push a pb cup in the middle right out of the oven? I have these really awesome sf mint chocolate meltaways. I am also going to try putting a 1/2 of one of those right in the middle when they come out of the oven. Thanks for this awesome recipe! |

Sure Mary! You dont want to waste any of that yummy deliciousness.
I am going to do some experimenting this weekend with sausage and spinach, no sweetener, maybe some savory spices for some breakfast muffins. The other morning, DH had a couple slices of turkey bacon and two of these with a TBS of natural PB. He was laughing about how his friends at work want to go on my "diet"! ![]() |

We went to Sam's over the weekend. THey had the big three pound block of Philly cream cheese for $6.32, so that's a little over $1 for 8 oz. I bought 2 big blocks.
