Made these for the first time on Sunday. Wow, very very good! I will try the sour cream next time, but even basic recipe is awesome. Bob agrees, and he is very picky.

I just got back on the low carb wagon and needed something sweet to keep me on it. I've made these several times before in a regular muffin pan with liners and bake. After reading the post where someone made them in a silicone muffin pan and microwaved them I thought I would give that a try. Went out late last night and bought one of those silicone pans, whipped up a batch and microwave it....OMG, it was fabulous!!!! They were done in a matter of minutes and didn't collapse...and sooooo creamy. I used to do the whole water bath thing, but this is way easier...and the quicker they're done, the quicker you can cool them....and the quicker you can cool them, the quicker you can eat them! Also, they popped right out, so no waste on the muffin liners!!!!

Lilycoe, You are my new cream cheese muffin best friend. I HAVE those cups but never though to use the nuker! It's SO not worth it to fire up the oven just for a 6 muffin batch for just lil' ol me! Yay!!! I love the individual silicon cups, I eat right out of them and just wash the one rather than the whole pan. Thank you for just a smart idea. I know someone probably poste t before, but thank you for bringing it up!! YaY |

Do you have the nutrional counts on this recipes? Instead of softening the cream cheese in microwave, can one leave it out on counter at room temperature to soften? This sounds like my mini cheesecakes. and you can't just eat one!

Nutritional counts will vary depending on sweeteners and additives you use. I think they were probably given somewhere up "top" for the original ones tho. ???
Of course you can just soften the cream cheese on the counter. Most people are just anxious to get it melted & the "muffins" made when they decide to make them, so they speed the process up by nuking the cream cheese. These ARE mini cheesecakes. I never considered them muffins myself, even tho that's what the name says. Just happen to be made in muffin "tins" (cups). |

This is probably one of my favorite low carb treats. It's my "go to" when I'm craving something decadent, easy and delicious. My non LCing DH and DS, who are HUGE cheesecake fans, looooove these little gems. I have to hide them or they will seriously eat them all before I get a chance to enjoy them. They are heavenly with raspberry or strawberry SF jam on the top.
I also consider them mini cheesecakes and not muffins at all. I use the Whipped Cream Cheese so no nuking or waiting for it to get to room temp for me. Just an idea ![]()

They are very yummy! I used the original recipe to try it first, but next time, I'm going to use the mixture of Splenda and erythritol. Or, I was thinking of trying it with some strawberry protein powder and sugar free flavored syrup with some sugar free jelly on top. They have been helping my cravings. Yay!!

I haven't made these is soooooo long so I decided to whip up some today! However I used 1 big silicone round cake "pan". Didn't feel like messing around with the little cups today. I haven't put it in the oven yet so if anyone knows how long to leave a big pan in for I'd would appreciate the info!
