yum! I just made some of these with the pumpkin syrup!
Well it has been a while, but my husband and I are back! We both went off low carb when i found out I was pregnant- and we both now have 40 pounds to loose! I am excited to make this our WOL again- we felt so much better when we ate this way. |

These little muffins sound absolutely wonderful. But I am going to add my own little "tweak" and sub the splenda for my granulated Sugar Twin that I bought from Canada. It has HALF the carbs of splenda! And I've already cooked with it and it is very nice!

oh wow, these are delicious!!! i just made my first batch and i had one warm while the others chill in the fridge...they are brilliant! i could snack on these all day! i certainly need more cream cheese! i added a little cinamon and splenda to the top and they were perfect. next time i'll make some whipped cream to go with them!

I made them with splenda and thought they tasted gross. I have been reading this thread and am going to try some different stuff that ppl have suggested. I really want to like them...it would be such a nice snack!

Make sure you are giving them a *resting period* before eating them. They taste TONS better once they've sat overnight in the fridge.

YAY! I did it!!!
I did it! I'm so proud! I made these for my low carb Superbowl party!!!
I followed the original recipe on the first page of the thread (except for mini instead of normal size) and topped with sugar free pie filling. The first time I made them I did the water bath thing and they didn't "fall". They were wonderful. This time I made them without the water bath hoping that they would fall in the middle and make a nice little spot for my filling! They did fall nicely but got brown around the edges without the water bath... I hope I didn't cook them too long and they still taste OK! I won't try them until tomorrow! ![]() ![]()

I do the same but use SF jam...I put it on the top about halfway done. I don't make them mini,I use custard cups and get 3 out of a half batch recipe!
