Stews

With all of the great chefs here I thought that maybe someone could help me. I enjoy stew in the winter but have never been able to make one that comes out right. The meat is usually stringy, tough, tasteless or some combination of all of those. What cut of beef do you buy and how do you prepare it. Also does anyone use meats other than beef? Thanks!

What matters most for stew meat (beef or otherwise) is how long you cook it and in what...(as in liquid and seasonings). And sure, I use lamb or pork or even chicken in a stew; stewing is a technique...

So, if you give one of your stew recipes you followed, maybe it just needs a look and a tweak?
