Your best cheesecake recipe, please, please

I want to make a cheesecake for my sister in law's birthday, but i have no recipes (good ones), and it has to be extraordinary.....please help me!

I second Beachgirl's Cheesecake. I've made the pumpkin one a couple times and it's always a hit.

New York-Style Cheesecake, no water bath needed

Crust:
1 1/4 cups ground pecans
1 tablespoon splenda
6 tablespoons butter, melted
1 tbsp cinnamon

Topping:

2 cups sour cream (16 oz. container)
1 teaspoon vanilla
3 tablespoon splenda

Filling:

3 packages (8 oz. each) cream cheese, soft
1 cup mixed sugar subs or all splenda
4 eggs
1 teaspoon vanilla

combine nuts, splenda, cinnamon and melted butter until combined. Press into bottom of a 9-inch springform pan. Chill in the refrigerator at least 15 minutes.

mix sour cream topping, until well combined refrigerate.

beat cream cheese, 1 cup sweetener until fluffy. Add eggs, one at a time, blending well after each addition. Blend in vanilla.

Pour the cream cheese mixture into the springform pan, bake at 350 degree for 50 minutes. Let cool 5-7 minutes,(IT WILL HAVE CRACKS) but that doesn't matter because the topping covers them.

Then with a spatula, spread the sour cream mixture over the top, making sure you reach to the edges of the pan. Return cake to oven bake 5 minutes. Remove cake from oven, allow to cool to room temperature (cake will settle in the pan). cool over night in frig..Slide a knife around the edge to loosen it, then remove the springform ring.

If you like apples, perfect for this time of the year. Try LindaSue's Apple Cheese Cake it's very pretty to look at, rich to eat you only need one small piece.This is the most elegant in the world of Cheesecakes. I also 2nd Cheri's it is hands down the best.
