LindaSue, I tried your deep dish pizza recipe...

LindaSue, I tried your deep dish pizza recipe.

However, I made an error.... I forgot to put the mozzarella cheese in the crust mixture!

I realized it after the pizza was already cooled, and chilling in the fridge!

However, I thought it still turned out great. The crust wasn't too crispy (I only chilled it for about 1/2 an hour) but even my picky eater husband loved it! It ended up being about 1/4" thick. Smelled wonderful! Probably would have made a nice cracker, cut up into rectangles.

I made it with chopped tomatoes, chopped onion, and sliced mushrooms.

Thanks again for all your recipes! I've made probably 3-4 of them a week for the last few weeks. They really have helped me from going to McDonald's every day for a salad or bunless burger.

I made this tonight too! I made it last week and loved it! I only put about 1/2 a cup of cheese in the crust, and topped it with only 1 cup. Then I sprinkle tons of black olives and chopped tomatoes on top. It really is wonderful! And even better cold...

Well it turned out very good! I refrigerated the crust for 2 hours, but I wish it had been crispier so I will cool it longer next time.

Sorry, Robin. I didn't see your question earlier. You don't have to chill the crust first, but I think it improves the texture.

Thanks! I think I need to chill it more than 2 hours. It will be fun to experiment with it.

If you're looking for more of a pizza "crust", try baking it on a 10x15 or larger cookie sheet (with edges). The thinner you spread the "crust", the more like pizza (and less like a quiche) it becomes.

If you bake it on a cookie sheet, you don't have to chill it before topping, either... just let it rest 15 min. or so before adding tomato sauce and toppings, then sticking back in oven to warm toppings and melt cheese on top.

I usually spread mozzerella on parchment paper in bottom of cookie sheet, then pour cream cheese/egg/etc. mixture over top.

It is pretty filling, isn't it? I can get by with just one piece of low carb pizza and I used to be able to scarf down about 6 slices of Little Caesar's years ago.

I made this tonight for DH's b-day dinner, and it was faaaaabulous!

I really stuffed the toppings on. . .sausage, some meatballs I had made all crumbled up, pepperoni, fresh mushrooms I sauteed in olive oil, green olives and lots, I mean LOTS of cheese!

I said as we feasted that "dieting" was really rough!

Made a strawberry LC cake, which was also really fabulous.

Thanks again, Linda, for all the recipes, and comments you make.

And we could only eat one piece each too.
