Vegetarian meal?
I have a friend who's doing great on Atkins, and is also a vegetarian! It would be way too hard for me to follow, but she loves it and is looking and feeling great!
Anyway, next weekend is their wedding anniversary and we're having them over for a nice dinner. I need a nice dish to make for her. I could just saute some veggies/mushrooms/spinach in garlic butter and she'd be happy, but I would love to make something a little more fancy. Any ideas?? Oh - she does eat eggs and cheese. No fish.Thanks!

LindaSue's Sweet Texas Onion Pie (rich and oniony and cheesey so small portions are fine) with a couple veggie sides or salad. My husband does eat fish but this pie is a real treat for him and it looks really nice too.
Or really any quiche recipe would do, too, with a nice salad. Like the onion pie, quiche is great room temperature (nice in this heat). Actually, if you go to LindaSue's site I'm sure you'll see all sorts of neat ideas. HTH. |

http://users3.ev1.net/~fontlady/main_dish_recipes.html Scroll down to "meatless dishes". Don't forget... firm tofu can be treated (a lot of times) like meat. Grill it, pan sear it, roast it, etc. Portabello mushrooms are fantastic on the grill... grill them face down, then turn them face up and fill them with cheese and herbs... yum!!! |
