3 Minute Mounds Cheesecake-Induction Friendly!
We came up with this on the Coconut thread, but the possibilities are endless! It's induction friendly too!
3 Minute Mounds Cheesecake 2 oz. softened cream cheese 1/4 tsp coconut extract-more or less to taste (or extract of choice for other varieties) 3 T coconut oil (I used virgin oil for the coconut flavor, but use a refined oil if you don't want the coconut flavor in other varieties) 1 full T cocoa 1/4 cup Chocolate Davinci's- more or less to taste (or flavor of choice for other varieties) 1 egg- beaten Mix all ingredients and microwave in a Pam sprayed microwave safe bowl (cereal size) for 3 minutes. Chill thoroughly and enjoy! Other varieties for those brave souls... chocolate with mint extract chocolate with orange or raspberry extract chocolate with Kaluha davincis chocolate with some peanut butter mixed in for "reese's" cheesecake chocolate with some instant coffee crystals for "mocha" cheesecake omit the cocoa and use vanilla davincis for plain cheesecake Add minicarb chips to the plain recipe for choc. chip cheesecake (after induction!) Pick a flavor of Davinci's and get creative! After induction you can add minicarb chips and unsweetened coconut for a truer Mounds flavor! Have fun! |

It was Carolyn's induction friendly bark recipe that inspired this cheesecake idea which we both got simultaneously! So it was sort of a TEAM effort...yes...TEAM COCONUT!!! (crowd goes wild)
For those watching fat, you may want to back the coconut oil down to 1 T. Carolyn put the numbers into ****** and with 3 T of oil it's 569 calories!! I use the 1/3 less fat cream cheese, but that oil adds up! Just thought I'd mention it! |

Hi..
I made this tonight for tomorrow's breakfast using one Tbs. of oil..and making a vanilla one..left out the chocolate..put in vanilla extract and Caramel SF.. I had to taste a bit......it was soooooooo yummy..can't wait for breakfast..!!! Yes, 1/3 less fat cream cheese would be fine, too. I'm sure. |

Just realized this was almost identical to Mock Danish, only I added coconut oil and refrigerated it instead of eating it warm! Talk about reinventing the wheel!

LOL 5cats4me!! It is a bit different though. Thanks for the recipe. It looks great. I think I'll try 1 tbsp coconut oil, because the calories are hefty. Why do we need the oil though?

I made this today. It is pretty good, but personally the 1/4 c DaVinci made it a little too watery. IF I make it again, and I may or may not, I'll either leave the DaVinci out, or at least cut back, and use some other sweetener. I think personally I would like it better. (Not meaning to be rude, or step on anyones feet here.)
I had made some homemade coconut butter, coconut cream, whatever today too. I spread some of that on top. So so. Remember, my tastes are much different than most peoples. |
