Need lunch ideas for this summer!
next Monday I start 8 weeks of summer intensives at school, where I'll be doing 15 credits. Due to this, I'll be on campus from 7:30am-2:20pm Monday-Friday. I have a few 20-30 minute breaks, but have to cross campus, so I won't have time to go to the cafeteria to eat. So I'll need to bring something with me that I can either eat while walking to my next class, or eat while in class. I have no access to a fridge or microwave, and will have to have it in my backpack.
For breakfast I always have 2 slices of flax bread and my morning cup of coffee. I will need to eat at least a large snack (if not a full lunch) during classes. Any ideas?

I have a small insulated lunch box type thing (sometimes I add a frozen Blue Ice to it, just in case). In it I take a the following, on occasion:
Portioned out nuts Ham and cheese rolls Tuna salad and almond thins Raw berries Tuna muffins (LindaSue's site) Homemade beef jerky Cubed cheese Pickles Sunflower seeds Pumpkin seeds Chicken wings Yogurt with granola Cut up turkey and homemade Ranch dressing Chopped veggies and homemade Ranch dressing SF chocolate Crystal Light individual things for water bottles 3 minute cake (pre made) Roasted chicken Olives I've even been known to take homemade tomato soup and sunflower crackers in a thermos when it's cold. I pretty much take anything that doesn't have to be reheated. Stuff stays cool. I pack my lunch the night before, don't take it out until I leave at 8 and we usually eat around 11:30. Everything is still really cold when I take it out. Good luck in class the summer! Kathryn |
