Help! I need a fabulous sausage ball recipe!
I have on hand...
Carbquick soy flour (does it expire, ive had it 9 months) flax seed almond flour and of course sausage and cheese. Does anyone have a good recipe...the one in the recipe room just doesnt have good reviews and i heard they fall apart. I dont mind mixing the almond flour with the carbquick if it will give better results. I am hosting a welcome to the neighborhood party and want a low carb table...i've already decided lil sandwiches with chedder bay bisquits (im going to use a different cheese, more mild) with hams and turkeys...and a few other things, as well as a cheesecake. These sausage balls with toothpicks in each would set the table off! HELP!

I always made sausage balls with bisquick. I would think you could make the same recipe with carbquick. I found this one on another low carb site.
1lb Bulk Sausage (u can use hot or mild, your pref) 1 1/2 C of Shredded Cheddar Cheese Approx 3c of LC Baking Mix (I sorta eyeball this now) - I use carbQuick 1/4-1/2c of heavy cream - add until the mixture can be rolled into balls and hold good shape, not too moist but not too dry Mix all the ingredients in a large bowl and roll it into balls (I usually roll them to about the size of meatballs -1" maybe?) then bake them at 400 degrees for approx 15-20min! I prefer them after they have cooled but they are good hot as well! |

Spicy Sausage Balls
2 packages hot/spicy sausage (the bulk packages) 1 1/2 cups Atkins baking mix 4 cups shredded sharp cheddar 1/2 cup jalapeno, finely chopped 1/2 cup onion, finely chopped 1/2 teaspoon garlic powder 1/2 teaspoon chili powder Mix all ingredients thoroughly. Form into 1" balls, and place on non-greased cookie sheet (I'd use one with sides, there's some grease that bakes out). Bake at 375 for 15 minutes, or until golden brown. Makes a YUMMY snack. Spicy & filling... you feel like you've actually eaten something. You can also freeze the uncooked balls... cook some now, some later. Makes approx 60 1" balls. 62g carbs, 21g fiber total. ----- I would guess subbing Carbquik for the Atkins Bake Mix would give you the same results, probably without the hint of soy, too...

My mom made some and she just added some shredded cheese to her roll of brakfast sausage, can't remember if she added any onion or not, but then just rolled into little balls and baked in the oven. They were delicious!!!

Ok i tweaked shadowzips recipe and made what i believe to be great sausage balls. I didnt make them till today because when i needed them i didnt want an experiment gone wrong. My hubby has hated all the other recipes ive ever made (he wants only the original kind) yet he thought these were the best he has ever had!
I used 2lbs spicy sausage (you can use mild) 2 cups of Carbquick 3 cups of Chedder Cheese (i use the preshredded, its drier, produces less grease) 1/4-1/2 cup of very finely chopped onion (depending on taste, i used half a small onion) 1/4-1/2 of cream to help the carbquick form with the meat. knead the mess out of this! Took me about 15 minutes of pounding folding squishing and kneading to mix it all up. If you use the spicy sausage you wont need other spices, but i added 1/2tsp of garlic and 1/2 tsp of cayenne pepper to mine since i used mild. Make little balls about a heaping tsp of raw mixture...not much bigger than an inch across cook 350 for 15 minutes, or until golden brown. makes about 75 sausage balls, about .75 carbs per ball. I made about a dozen for myself and hubby for lunch and froze the rest raw in a single layer in zip lock baggies to cook later. these were the best low carb sausage balls ive made yet, and i've made about 4 other recipes before getting the carbquick!!!!! ![]() Last edited by nurseypoo5; 04-15-2005 at 12:38 PM.. |

That's about what I make.
Low Carb Sausage Balls [TigerSmoke] 1.5 cups Carbquick 1/2 lb bulk sausage 2 cups (8oz) cheddar cheese 1/4 cup grated parmesan cheese 1/8 cup water 1/8 cup heavy cream dash of Italian seasoning Heat oven to 350 grease large jelly roll pan. Stir all ingredients by hand in a bowl. It will seem very dry at first, keep working it and it will get moist. Roll into around 30 large balls. Bake. I'd start checking for them to get brown around 15 minutes. I've found that carbquick bakes faster than bisquick. Per Ball (30 per batch) 86 Calories 7g Fat 4g Protein 3g Carbs - 2g Fiber = 1 net carb 149mg sodium (significantly less than with bisquick!) My recipe makes about half what yours does, but they sure are great. My hats off to Carbquik. ![]() |

simple, tasty low carb sausage ball recipe
3/4 C Atkins baking mix
1 tsp. baking powder 1 lb. sausage (hot or mild) 1 1/2 C cheddar cheese (sharp or mild) 1-2 tbsp of either water or Frank's Red Hot Sauce (0 calories, 0 carbs) I like them spicy, so I use hot sausage and Frank's. Heat oven to 375. Mix Atkins baking mix and baking powder together in a large bowl. Add sausage and cheddar cheese. Knead until you can't mix in the dry ingredients anymore. Moisten with a tbsp of water or Frank's at a time until it all binds together. Roll into 25 1-inch balls. Bake on a cookie sheet for 20-23 minutes. Each sausage ball contains: 95 calories 7g fat 7g protein 0.4 net carbs |

When I saw who began this post I knew it had to be an old one. Sounds great though. Except I avoid soy like the plague. I also would use Jennifer Eloff's baking mix in place of the Atkins bake mix or the soy

Sausage Cheese Balls
![]() INGREDIENTS: 1 c. grated cheddar cheese 8 oz. ground pork 1/4 tsp. poultry seasoning pinch cayenne pepper 1/3 c. CarbQuick bake mix DIRECTIONS: Preheat oven to 350º. In a medium bowl, mix the ground pork well with the poultry seasoning and cayenne pepper. This is best done with your hands to blend well. Next add the grated cheddar and CarbQuick. Work it all together with your hands until it will hold together and can be formed into balls. Roll into sixteen 1-1¼” balls. Place on ungreased baking sheet and bake at 350º for 15-20 minutes. You don’t have to turn them during baking, but they will brown more evenly if you do. Remove carefully with metal spatula, trying not to tear up, and drain off grease on paper towel. Serve warm. NUTRITIONAL INFO: Makes 16 balls, or 4 servings. Each serving of four contains: 261 calories 21.5 g fat 5.5 g carbs 3.5 g fiber 2 g NET CARBS 17 g protein 388 mg sodium
